Roast Beef Burritos

Ingredients

  • oil
  • 1 clove garlic, minced
  • 1 small onion, chopped
  • 4 cups leftover roast beef, shredded
  • 4-5 fresh tomatoes, chopped
  • 1 can chopped green chilies
  • 1/2 tsp. cumin
  • 1 can taco sauce (8oz.)
  • 1 package flour tortillas
  • 1 can enchilada sauce (8 oz.)
  • 1 cup grated cheddar cheese

Directions

In skillet, heat small amount of oil and saute' the garlic and onion until tender. Add beef, tomatoes, chilies, cumin and taco sauce. Simmer at least 1 hour. If desired, the dish may be thickened by adding cornstarch or a mixture of 1/4 cup flour and 1 cup cold water. Heat tortillas. Spoon meat onto tortillas and roll up. Heat enchilada sauce and add cheese. Stir constantly until cheese is melted. Watch closely to prevent cheese from sticking to pan. Spoon sauce on burritos.
