Spicy Nacho Bake

Ingredients

  • 2 lb. ground beef
  • 2 large onions, chopped
  • 2 large green peppers, chopped
  • 2 cans diced tomatoes, undrained (28oz. each)
  • 2 cans hot chili beans (15oz. each)
  • 2 cans black beans, rinsed and drained (15oz. each)
  • 2 cans whole kernel corn, drained (11oz. each)
  • 2 cans tomato sauce (8oz. each)
  • 2 envelopes taco seasoning
  • 2 packages. spicy nacho tortilla chips
  • 4 cups shredded cheddar cheese

Directions

In a Dutch oven or large kettle, cook the beef, onions and green peppers over medium heat until meat is no longer pink; drain. Stir in the tomatoes, beans, corn, tomato sauce and taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes (mixture will be thin). In each of two greased 9x13 inch baking dishes, layer 5 cup of chips and 4 2/3 cup meat mixture. Repeat layers. Top each with 4 cups of chips and 2 cups of cheese. Bake, uncovered, at 350 degrees F for 20-25 minutes or until golden brown.

Thanks so much for posting this. I had the Taste of Home recipe book and lost the recipe page in the grocery store while I was shopping for all of the ingredients. I got home with all the food and no idea how to make it!! :) You saved our dinner!
