Wild Rice Quiche
- 3 eggs, beaten
- 1 1/2 cups half and half
- 3/4 cup grated Swiss cheese
- 3/4 cup grated Monterey Jack cheese
- onion and parsley, to taste
- 5 slices, crumbled, fried bacon
- 2 cups cooked wild rice
- unbaked pie shell
Combine all ingredients. Pour into unbaked pie shell. Bake 10 minutes at 450 degrees F. Lower heat to 350 degrees F for 30 minutes more. Remove and let set up for 10 minutes before cutting and serving. Serves 6.
