Carolina Potato Salad
- 6 medium potatoes, cooked, diced
- 1 green pepper, chopped
- 1 small onion, chopped
- 1 large tomato, diced
- 2 stalks celery, chopped
- 3 sweet pickles, chopped
- 3 hard-boiled eggs
- 1/2 cup mayonnaise
- 2 Tbsp. mustard (opt.)
- salt and pepper to taste
Combine first 6 ingredients with 2 chopped hard-boiled eggs in large bowl, tossing to mix. Add mayonnaise, mustard and seasoning, mixing well. Spoon into salad bowl lined with lettuce leaves. Garnish with egg slices.

Sounds like a truly yummy recipe! But, here's a little time saver: Dice the potatoes before you cook them! That way, they cook much faster. Unless you're using leftover baked potatoes, in which case, you would be saving money by not wasting them! :) Either way, who doesn't like to save?!?
