Cheese Chowder

So rich and delicious!

Ingredients:

  • 1/4 cup finely chopped onion
  • 2 Tbsp. butter or margarine
  • 1/4 cup flour
  • 2 cup milk
  • 1 13 3/4 oz can chicken (not condensed)
  • 1/4 cup finely diced carrots
  • 1/4 cup finely diced celery
  • dash of salt and paprika
  • 1/2 cup cubed American cheese or 10 slices

Directions:

Cook onion in butter until tender.Blend in flour. Add remaining ingredients except cheese.

Cook and stir until thick and bubbly. Reduce heat and add the cheese, stir to melt.

Simmer 15 minutes.

May add 1 cubed boiled potato and double the cheese for a thicker chowder. Try smoked Swiss cheese for a great smoky twang.

Recipe: Cheese Chowder

Ingredients:

  • 1 lb. ground beef
  • onion
  • 2 cups grated cheese, like Velveeta
  • 4 cups milk
  • 1 cup frozen hash browns or cubed potatoes

Directions:

In saucepan heat milk and cheese until cheese is melted. In another pan, brown ground beef and onion; drain. Add to milk mixture. Next add potatoes to mixture and simmer until potatoes are cooked. This is good with a can of corn added as well.

Recipe: Cheezy Chowder

Ingredients:

  • 1 chicken bouillon cube
  • 1 1/2 cups boiling water
  • 2 cups potatoes, chopped
  • 1 pkg. frozen mixed vegetables (10oz.)
  • 1/4 cup onion, chopped
  • 1 can cream-style corn
  • 1 jar Cheez Whiz (8oz.)
  • 1/2 cup milk

Directions:

Dissolve bouillon in water. Add potatoes, vegetables and onion. Cover and simmer 10 minutes or until tender. Add remaining ingredients and heat until cheese is melted.

RE: Cheezy Chowder

This is one of our family's favorite soup recipes. You can also substitute Velveeta for the cheese whiz, a large can of Veg-All for the frozen veggies, and frozen potatoes for the fresh. I've done it both ways. We also add cooked, diced chicken, as well. If it seems to thin, stir in a couple of Tbsp of cornstarch in the milk before adding to the soup to thicken it up. (10/05/2009)
