Healthy Snacks for Fishing Trips

I have a friend looking for healthy snacks to take on fishing trips. Oil and Vinegar Cole Slaw

Does anyone have a recipe for cole slaw using vinegar and oil? We used to get it at Eagle's Food Store and loved it. Hugs.

Out of salad dressing and vinegar, too? Just substitute lemon juice for the vinegar and mix with olive or vegetable oil and add your favorite herbs and/or spices.

Indian Bean Bread

This goes really good with green beans and pork. There are few ingredients. It's simple and no oil, yeast, flour, and wheat free!

Ingredients:

  • 4 cups cornmeal
  • 1/2 tsp. soda
  • 2 cups cooked beans
  • 2 cups boiling water

Directions:

Put cornmeal in bowl; mix in drained beans. Hollow out a hole and put in soda and water. Make a stiff dough to form balls. Drop balls into pot of boiling water. Cook 45 minutes or until done.

Serve with cooked greens and pork.

Makes 1 batch.

Chocolate Chip Oatmeal Cookies

Hey guys, here is a chocolate chip oatmeal recipe.

Ingredients

  • 3/4 cup of butter
  • 1 cup of maple syrup
  • 1/2 tsp. of baking soda
  • 1/2 cup of brown sugar
  • 1 egg
  • 1 cup of flour
  • 1 tsp. of cinnamon
  • 2 tsp. of vanilla (optional)
  • 3 cups of uncooked rolled oats
  • 1 1/2 cup chocolate chips

Directions

In a large mixing bowl, cream butter, maple syrup, and sugar. Beat in egg and vanilla. Combine the flour, baking soda and cinnamon. Add rolled oats. Stir in chocolate chips and nuts, if desired. Drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets. Bake at 375 degrees F for 10-12 minutes or until lightly browned. Remove to wire racks.

Chicken Caesar Pasta

Ingredients:

  • 1 Tbsp. vegetable oil
  • 1 lb. skinless, boneless chicken breast, cut in to bite size pieces
  • 1 can Cream of Celery soup
  • 1 cup water
  • 1/3 cup Caesar salad dressing
  • 1 cup cherry tomatoes, halved
  • 1 lb. linguine or fettuccine
  • Parmesan cheese, shredded

Directions:

Heat the oil in skillet. Add chicken and cook until browned. Add soup, water and dressing and bring to a boil. Add tomatoes. Cover and simmer on low heat for 5 minutes. Toss with cooked linguine or fettuccine. Serve with Parmesan cheese.

Snack Bar

It's tasty and is full of fibre

Ingredients:

  • 250 ml jungle oats
  • 250 ml rice crispies
  • 4 weetbix*
  • 250 ml dessicated coconut
  • 60 ml mixed dry fruit
  • 180 ml brown sugar
  • 125 ml golden syrup
  • 125 ml peanut butter
  • 125 ml butter
  • 250 ml slab chocolate
*Weetbix is a pressed wheat cereal from Australia

Directions:

Dissolve sugar and butter over low heat. Combine all the ingredients till well blended Pour into a greased casserole. Melt chocolate over low heat. Pour chocolate over mixed ingredients and let is to set in the refrigerator. Cut into bars when set. Store in airtight jar.

Mock Champagne Punch

Easy and really tastes like champagne!

Ingredients:

  • 1 can of white grape juice
  • 1 can white peach grape juice
  • 1 bottle ginger ale

Directions:

Mix and serve! Garnish with strawberries.

Robin's Recipe Corner:

Veal in Sour Cream

Ingredients:

  • 2 lbs. veal cutlets in cubes
  • butter to brown
  • 2 Tbsp. flour
  • 1/2 tsp. salt
  • dash paprika
  • 1 cup sour cream
  • 1 cup mushrooms, chopped

Directions:

Brown veal cutlets in butter, place in covered dish. Mix flour to smooth paste with 3 Tbsp. water in frying pan. Slowly add seasoning and cream, stirring constantly. When thickened remove from stove. Add mushrooms and pour over veal cubes. Bake at 300 degrees F for 1 hour. Serves 6.

Hush Puppies

These are a great compliment to fish or chicken.

Ingredients:

  • 2 cups corn meal
  • 2 Tbsp. baking powder
  • 1 1/4 cup milk
  • cooking oil
  • 1 tsp. salt
  • 1 cup onion, chopped up fine
  • 1/2 cup water

Directions:

First, heat about 1/2 inch of cooking oil to about 360 degrees F, because the rest of it doesn't take long. While it is heating, mix the corn meal, baking powder and salt. Then jumble in the onions. Blend in the milk and water next, maybe adding a little more corn meal ( if necessary), until the dough is stiff enough to be able to be handled. Shape dough into oblong thumb-sized cakes and drop them into the fat and fry. Turn occasionally until they are done, about 15 minutes.

Peanut Butter Pie

Ingredients

  • 8 oz. softened cream cheese
  • 1/2 cup peanut butter
  • 9 oz. whipped topping (Cool Whip or other)
  • 1 cup powdered sugar
  • 1/2 cup milk
  • 1/4 cup finely chopped peanuts
  • 2 (8 inch) graham cracker crusts

Directions

Whip cheese until soft and fluffy. Beat in peanut butter and sugar. Add milk, blending well. Fold in topping. Pour into crust. Sprinkle with nuts. Freeze until firm. Can be served frozen or slightly defrosted.

Beef And Bean Crock Pot Soup

Ingredients:

  • 1 lb. ground beef
  • 1 can butter beans
  • 1 can pork and beans
  • 1 can mushrooms
  • 1/2 cup brown sugar
  • 2 tsp. mustard
  • 1/8 cup onions, chopped
  • 1/4 cup water

Directions:

Brown hamburger. Drain and put in crockpot. Add butter beans, pork and beans, mushrooms, sugar, mustard and onions. Add water if it needs more juice.

Set crockpot on medium for 2 hours; then reduce to low until ready to eat. Serves 4.

When doubling this recipe, double all ingredients except hamburger as 1 lb. will be plenty for a double batch.

Strawberry Salad

Ingredients:

  • 2 pkgs. strawberry gelatin (3oz. size)
  • 1 pkg. frozen strawberries (1lb.)
  • 1 1/2 cups crushed pineapple
  • 1/2 cup mayonnaise
  • 3 cups hot water
  • 2 tsp. lemon juice
  • 1 small pkg. cream cheese

Directions:

Dissolve gelatin in hot water. Let start to jell. Add strawberries, lemon juice and pineapple. Mix cheese with mayonnaise and add, beating into gelatin mixture. Add dash salt. Place in a mold.
