Ingredients
- 1 med. zucchini, peeled and cubed
- 1 small butternut squash, peeled and cubed
- 2 lg. potatoes, cubed
- 2 lg. red potatoes, cubed
- 1 med. green pepper
- 1 med. sweet red pepper
- 1 small onion, sliced
- 3 med. carrots, chopped
- 4 garlic cloves, peeled
- 1 tsp. dried basil and oregano
- 2 tsp. salt
- 1 tsp. garlic salt
- 1/2 tsp. pepper
- 1/2 cup olive or canola oil
Directions
In a large bowl toss all ingredients until well coated. Arrange in single layers in 15x10 inch baking pans. Bake uncovered at 425 degrees F for 25-30 minutes or until veggies are tender, stirring occasionally. Truly a harvest special!
