Hot Chicken Salad

Ingredients

  • 2 cups cooked, diced chicken
  • 2 cups celery, chopped fine
  • 1 Tbsp. grated onion
  • 1 Tbsp. lemon juice
  • 1 cup mayonnaise
  • 1/2 tsp. salt
  • 1/2 cup slivered almonds

Directions

Mix above ingredients together and put in buttered casserole. Top with grated cheddar cheese; then crush potato chips and put over cheese. Bake at 450 degrees F for 10 minutes.

Ingredients

  • 2 cups cooked chicken, cut up
  • 1 cup celery, diced
  • 1/2 cup green pepper, chopped
  • 2 slices Swiss cheese, diced
  • minced onion to taste
  • 1/2 cup slivered almonds
  • 2 Tbsp. lemon juice
  • 1 cup mayonnaise

Directions

Mix all and put into casserole. Top with crushed corn chips or potato chips. Bake at 375 degrees F for 45 minutes or 400 degrees F for 35 minutes. Watch closely!

Ingredients

  • 3 cups cooked chicken (or tuna)
  • 1 1/2 cups diced celery
  • 1/2 cup chopped almonds
  • 1 1/2 Tbsp. minced onion
  • 1 1/2 Tbsp. lemon juice
  • 1/2 tsp. pepper
  • 3/4 -1 cup salad dressing
  • 1 1/2 cups grated cheddar cheese
  • 1 can chow mein noodles

Directions

Combine meat, celery, almonds, onion, lemon juice and pepper in mixing bowl; add salad dressing and toss. Place in 9x13 inch pan. Sprinkle generously with cheese and top with noodles. Bake for 25 minutes at 375 degrees F. Serves 6-8

Ingredients

  • 4 cups chopped cooked chicken
  • 4 hard boiled eggs (chopped)
  • 3 cups cooked rice
  • 1 tsp. salt
  • 2 Tbsp. lemon juice
  • 1 1/2 cup chopped celery
  • 1 small onion (chopped)
  • 1 cup Hellmann's mayonnaise
  • 2 cans cream of mushroom soup
  • 1 pkg. slivered almonds
  • 1 cup bread crumbs
  • 2 Tbsp. melted butter

Directions

Combine chicken, eggs, rice, salt, lemon juice, celery, onion, mayonnaise, soup, and almonds in bowl. Mix well. Spoon into buttered 9x13 inch baking dish. Chill covered overnight. Let stand at room temperature for 1 hour. Sprinkle with mixture of bread crumbs and melted butter. Bake at 350 degrees F for 45 minutes or until bubbly.

Ingredients

  • 2 1/2 cups chopped cooked chicken
  • 2 cups chopped celery
  • 1/2 cup chopped almonds
  • 1/4 cup chopped green peppers
  • 2 Tbsp. chopped onions
  • 2 Tbsp. chopped pimentos
  • 3/4 tsp. salt
  • 2 tsp. lemon juice
  • 1/4 tsp. pepper
  • 3/4 cup mayonnaise (Miracle Whip)

Topping:

  • 1/2 cup grated cheese
  • 1 cup crushed potato chips

Directions

Mix all together, except topping. Put in shallow pan (baking dish) and bake at 350 degrees F for 20-25 minutes. Optional - 1 cup green peas, 1/2 tsp. curry powder and small can chopped mushrooms (all add to flavor).

  • 2-3 cups diced cooked chicken
  • 2/3 cup diced celery
  • 1 can water chestnuts, diced
  • 1/2 cup slivered almonds
  • 1/2 lb. cheddar cheese, grated
  • 1 pkg. frozen chopped onions
  • 1 cup mayonnaise
  • juice of 1 lemon
  • poultry seasoning and paprika
  • potato chips

Directions

Combine all ingredients except potato chips. Mix well and place in 9x13 inch casserole. Refrigerate overnight. Before serving top with crushed potato chips and bake at 450 degrees F for 12-15 minutes or until bubbly and brown.
