No-Oil Blue or Feta Cheese Dressing
Mix 4 oz crumbled blue or feta cheeses to 16 oz. nonfat plain yogurt. Add 2 Tbsp. cider vinegar, mix to blend and allow flavors to blend in refrigerator for a few hours. This is thick, can makes a great veggie dip, too.

Steam asparagus spears until tender; drain and place on serving platter. In small jar with tight-fitting lid, shake together the oil, lemon juice, mustard, pepper and salt. When ready to serve (can be served warm or at room temperature), pour vinaigrette evenly over asparagus, sprinkle with bread crumbs and garnish with cherry tomato halves, if desired.
Nutritional Info Per Serving: 91 Calories; 5g Fat (49.7% calories from fat); 3g Protein; 9g Carbs; 3g Dietary Fiber; trace Cholesterol; 186mg Sodium.

Low Carb Mock-a-Roni and Cheese
Ingredients:
Directions:
Grease one large or two small casserole dishes and preheat oven to 350 degrees F. Press and drain any excess water from the tofu in a paper-towel lined colander.
Chop drained tofu and scatter in the casserole dish. Top with cooked bite size pieces of cauliflower and grated cheese. Beat eggs and cream with seasonings, pour over contents of casserole dish. Sprinkle parmesan cheese and bacon bit crumbs over the top. Bake 45 to 60 minutes, until top is well browned. If necessary or desired, place under broiler briefly to crisp top. Makes 12 servings.

Chicken, Spinach, And Shell Soup
Yield: 4 servings (About 1-1/4 cups each)
Ingredients:
Directions:
In a large pot over medium-high heat, heat the oil. Add the onion and garlic. Saute for 4 minutes. Add the spinach and cook for 2 minutes until the spinach is wilted. Add the broth and tomatoes. Bring it to a boil. Lower the heat and simmer 15 minutes. Add the chicken. Simmer for 5 minutes more until chicken is cooked through. Add the cooked shells and season with salt and pepper. Top each soup bowl with Parmesan cheese, just before serving.

Mix first 6 ingredients together. In a separate bowl; mix remaining ingredients and pour over macaroni mixture; mix well and chill. This will keep in refrigerator for several days.

Clean, peel and slice cucumbers and cut tomatoes into wedges. Add green onions. Place vegetables in a large bowl and top with dill, pepper and salt. toss lightly and refrigerate for 25-30 minutes. Gently turn in yogurt, vinegar and sugar. Place in sealed container, and chill for at least 2-3 hours.

Orange-Honey Dressing:
Directions:
Mix oranges and kiwi in a serving bowl. Mix dressing ingredients. Toss fruit with Orange Honey Dressing. Sprinkle with dried cranberries. Makes 6 servings.

In a bowl, stir sugar, Kool-aid mix and milk until sugar is dissolved. Pour into a shallow freezer container; cover and freeze for 1 hour or until slightly thickened. Transfer into a mixing bowl; beat until smooth. Return to freezer container; cover and freeze until firm. Remove from the freezer 20 minutes before serving. Yield: about 3 cups.

Dirt Cake
We went to a B'day party over the weekend and someone brought the most delicious DIRT CAKE made inside of a clean pail and used a shovel to serve it. It was so good, that most people ate too much of it and left with a tummy ache. LOL.
Serves 15
Ingredients:

Crumble Oreos, a few at a time, in a blender or food processor. Blend pudding and milk. Blend cream cheese and cool whip; add to pudding mixture and mix well. Put a layer of crumbled Oreos into the flowerpot; add some pudding and candy worms and continue layering. Top layer of "dirt" is made of Oreo cookies with worms wriggling out.
Place flowers on top. Serves 15 to 20.

Flower-Pot Dirt Cake

In a food processor or blended crush cookies until fine. Set aside. In a mixing bowl beat cream cheese, butter and sugar until smooth. In another bowl, mix pudding and milk until blended. Fold into cheese mixture. Fold in whipped topping. Line flowerpot with foil. Alternate layers of crumbs and pudding ending with crumbs. Chill several hours or overnight. Decorate with silk flowers and gummy worms. Makes 12 servings.

Combine flour packet from cake mix with cocoa. Prepare cake according to package directions. Fold chocolate flavoring into batter. Bake cake according to package directions. Sprinkle cooled cake with powdered sugar.
