Store Cans In Fridge For Hot Weather Meals

Keep a few cans of tuna or chicken in the fridge, for in those times when you need a quick meal. They'll be great to either drain and toss on top of a green salad or a quickie dish of tuna or chicken salad. Also, other canned goods I keep in the fridge from time to time are: pork and beans, German style potato salad, pickled beats. Living here in the desert, anything cold is greatly appreciated, especially if it can shorten my time in the kitchen!

Recipe for home made 3-bean salad, easy & much cheaper than buying it ready made. You can also make a chow-chow or mixed veggie salad w/ this 'dressing' using canned mixed veggies instead of just beans. All cans are 14-16ounce.

1 can cut green beans, one yellow, one kidney
3/4 cup white table sugar
1 teaspoon salt
1/2 teaspoon pepper
1/3 cup vegetable oil (liquid oil)
2/3 cup white vinegar

1 small onion, any kind
1/2 green or any color bell pepper
You can mix / match / change recipe to suit you.

Drain all veggies, gently mix all ingredients together, refrigerate 1 day for best flavor. The sugar will dissolve as it sits in the refrigerator.

while growing up my mom always kept a can or 2 of fruit in the frige - this was a fast snack for us kids
