Vegetable Cheese Souffle'
- 1 1/2 cups grated sharp Cheddar cheese
- 2 cans chopped green chilies
- 2 cans whole green beans, drained
- 2 cans whole kernel corn, drained
- salt and pepper
- 1/2 lb. Monterey Jack cheese slices
- 3 eggs
- 3/4 cup sour cream
Grease 2 qt. casserole well and sprinkle with some Cheddar cheese and chopped chilies. Place green beans and corn on top. Add salt and pepper to taste. Repeat layers, ending with cheddar cheese and cover this with Monterey Jack cheese. Just before putting in oven, beat eggs and sour cream and pour over vegetable mixture. Bake at 350 degrees F for 1 hour.
