Zucchini-Pineapple Bread

Ingredients

  • 2 cups sugar
  • 1 cup cooking oil
  • 3 eggs
  • 2 cups zucchini, grated, drained
  • 3 cups flour
  • 1 tsp. almond extract
  • 2 tsp. vanilla
  • 1 cup crushed pineapple, undrained
  • 1/2 cup raisins
  • 1 cup chopped nuts
  • 1 tsp. salt
  • 1 tsp. soda

Directions

Mix all ingredients together. Grease and flour bread pan lightly. Bake at 350 degrees F for 1 hour or until done.

Recipe: Zucchini-Pineapple Bread

Ingredients

  • 1 cup vegetable oil
  • 3 eggs
  • 3 cups flour
  • 2 cups sugar
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 3/4 tsp. nutmeg
  • 1 cup nuts, chopped (opt.)
  • 1 cup white raisins
  • 2 cups shredded zucchini
  • 2 tsp. baking soda
  • 2 tsp. vanilla
  • 1 cup crushed pineapple, drained

Directions

Beat together oil, eggs, sugar, zucchini and pineapple. Pour over dry ingredients. Stir until moistened. Turn into 2 greased loaf pans or 4 small ones. Bake 1 hour and 15 minutes at 350 degrees F.
