Fresh Apple Omelette

Ingredients

  • 3 Tbsp. flour
  • 1/4 tsp baking powder
  • dash salt
  • 2 egg whites
  • 3 Tbsp. sugar
  • 3 Tbsp. milk
  • 2 egg yolks, beatened
  • 1 Tbsp. lemon juice
  • 1 large concord apple unpeeled, thinly sliced
  • 1/4 cup sugar
  • 1/4 tsp. cinnamon

Directions

Preheat oven 375 degrees F. Sift flour, baking powder, and salt. With electric mixer, beat egg whites until foamy. Add 3 Tbsp. sugar, continue beating until stiff. In small. bowl, place flour mix, adding milk and egg yolks. Beating until smooth. With rubber scraper, gently mix in froth and lemon juice. Heat pan with butter, pour all of mix into a large pan, spread around. Remove from heat, place apples on top sprinkled with sugar and cinnamon. Bake in oven for 10 minutes.
