Apple Dumplings I
Ingredients:
- 2 cups sugar
- 2 cups water
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 cup butter
- 2 cups flour
- 1 tsp. salt
- 2 tsp. baking powder
- 3/4 cup shortening
- 1/2 cup milk
Directions:
Cook above 5 minutes. Set aside. Mix the other ingredients like pie crust. Put layer crust on bottom of long cake pan. Put in sliced apples. Cover with rest of crust. Then pour the liquid over the raw crust and bake at 400 degrees F until done.

Dumplings
Ingredients
- refrigerated pie crusts
- 4 cooking apples, peeled and cored
- 1/4 cup sugar
- 1 tsp. cinnamon
- 2 Tbsp. raisins
- 1 egg
- 1 tsp. water
Sauce
- 1/2 cup sugar
- 1 cup water
- 2 Tbsp. butter
- 1/4 tsp. cinnamon
Directions
Heat oven to 400 degrees F. Allow pie crust to come to room temperature. Unfold crust and cut into fourths. From curved edge of each pastry piece cut a leaf shape to use as garnish. Place an apple in center of each pastry piece. In small bowl, combine 1/4 cup sugar, 1 Tbsp. cinnamon and raisins; spoon into apple cavities. Bring sides of pastry piece up to center of apple; press edges to seal. Garnish with pastry leaf. Place in ungreased 9 inch square baking pan. In small bowl, beat together egg and 1 tsp. water; brush over dumplings. Bake at 400 for 15 minutes. Combine sauce ingredients in small saucepan. Bring to a boil; continue boiling for 2 minutes. Pour over partially baked dumplings; bake for an additional 25-30 minutes or until crust is deep golden brown. Spoon sauce over dumplings several times during baking. Serve warm or cool. Makes four dumplings.

Apple Dumplings III
Ingredients
- 2 cups flour
- 1 tsp. salt
- 2 tsp. baking powder
- 3/4 cup shortening
- 1/2 cup milk
- 6 apples
- sugar
- butter
- cinnamon
Syrup:
- 2 cups sugar
- 2 cups water
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 cup butter
Directions
Sift flour, salt and baking powder. Cut in shortening. Add milk all at once and stir only until all the flour is moistened. Roll out dough to 1/4 inch thickness. Cut into 6 five-inch squares. Put flour quarters of pared apples on each square. (Dice the apples, if you prefer.) Sprinkle each square with about 1 T. sugar. (If the apples are unusually sour, you will want to use more.), cinnamon and dot with butter. Fold corners to center and pinch together. Place dumplings an inch apart in a 10x12 inch pan. Cover with hot syrup.
Mix all syrup ingredients in a saucepan and heat to dissolve sugar. Pour over dumplings and bake at 375 degrees F for 35 minutes. Serve warm with cream or ice cream.
