Ground Spices vs. Fresh Spices?

A cutting board with ground spices and fresh spices on it.Are ground spices as good as the fresh ones?

It depends on your palate. Most of us are used the milder taste of ground spices from that familiar bottle in the kitchen rack, and tasting fresh ground spices the first time can be a real shock to the taste buds.

If using fresh, you'll need less in recipes, and be prepared for the sometimes majour difference in taste.

Personally I prefer fresh but fresh are hideously expensive and the inconvenience is also a factor; majour hassle if you're in the middle of a recipe and find out you forgot to pick something up!

You can grow a lot of your own spice ingredients but that can be expensive as well especially if you like things like cumin, cayenne, and saffron!
