Halloween English Muffin Pizza

Turn everyday food into Halloween food!

Ingredients:

  • 4 English muffins, split
  • 1 1/2 Tbsp. butter
  • 1/2 cup pesto sauce
  • 3/4 cup shredded cooked rotisserie chicken breast (optional)
  • 1 cup shredded mozzarella cheese
  • sliced black olives
  • red bell pepper

Directions:

Preheat oven to 375 degrees F.

Butter each English muffin half. Place on a cookie sheet, buttered side up, and bake on center rack until lightly golden, 5 minutes.

Spread pesto sauce over English muffin halves. Top with shredded chicken and mozzarella cheese. Bake 10-15 minutes until cheese is melted and golden.

Decorate each English muffin pizza with two black olive slices for eyes. Cut little triangles out of red pepper. Place on pizzas for the monster's nose.

Recipe: Halloween English Muffin Pizza

This is a great lunch, dinner or snack for kids, and makes an ordinary little pizza special. Lightly toast an English muffin. Place a little sauce on the muffin. Use a Halloween or holiday cookie cutter to cut a fun shape out of a cheese slice. Place cheese shape on top of sauce. Place English muffin under a broiler just until the cheese begins to melt. Cool before eating.

I smiled when I saw this recipe. These were called pizzas witches in the cafeteria in the junior/senior high school I attended in the late 60's and early 70's. My mama made them and then I did for my kids and their friends growing up. Everybody loved them and still talks about them! (10/22/2009)
