Substitutions for Canned Tomatoes

What can I use to substitute canned tomatoes when making things like beef stew, gumbo or spaghetti? My kids do not like tomatoes and I was wondering can I just substitute with canned tomato sauce?

Golden Onion Rings

Beat together:

  • 1 cup pancake mix
  • 1 egg
  • 1 Tbsp. salad oil
  • 1/2 cup or more (if needed) sweet milk
  • onion rings
Slice and separate onion rings. Dip each in above mixture and drop in hot oil or shortening until brown.

Rice-less Jambalaya

Ingredients

  • 28 oz. canned diced tomatoes
  • 1 cup celery
  • 1/2 cup onion
  • 1 cup green bell pepper
  • 8 oz. keilbasa or smoked sausage
  • 1/2 lb. shrimp
  • 1 Tbsp. garlic powder
  • 1tsp. parsley
  • 1tsp. salt
  • 1Tbsp. ground pepper
  • Tabasco sauce (to taste)

Directions

All will be cooked in slow cooker/crock pot. Toss in diced tomatoes (do not drain). Turn crock pot on low. Chop up onions, green pepper and celery and add them to crock pot. If shrimp is bite size, add to pot, if larger, cut into bite size pieces before adding to pot. Slice up kielbasa (half circles, 1/4 inch thick tend to be perfect size) and add to mixture. Add garlic powder, parsley, salt and pepper and finally tabasco sauce. Any variety of tabasco will do. We choose garlic tabasco and since that has a milder spiciness, we use more than if we used the original tabasco sauce. It will look pretty dry at first. Do NOT add water. The juices from the diced tomatoes will be just the right amount of liquid by time it is thoroughly cooked. Cook on low for about 4 to 6 hours. If needed sooner, increase heat to high, but check on it frequently to prevent burning. Will serve approx. 4. Leftovers taste just as good as when first cooked.

Spanish Rice With Beef

Ingredients

  • 3/4 lb. ground beef
  • 1 pkg. frozen mixed vegetables or corn (10oz.)
  • 1 cup water
  • 1/2 tsp. chili powder
  • 1/2 tsp. salt
  • 1/4 tsp. garlic powder
  • 1/8 tsp. black pepper
  • 1 can stewed tomatoes (14oz.)
  • 1/2 tsp. oregano
  • 1 1/2 cup Minute rice

Directions

Brown and meat, breaking and stirring about 5 minutes. Add vegetables, water, tomatoes and seasonings and bring to a boil. Stir in dry rice, cover, and remove from heat. Let stand 5 minutes.

Shake and Make Ice Cream

This is a great thing for children to do. Younger ones might get bored shaking, but I think it would be good for a 7 to maybe 10 years old.

Ingredients

  • 2 TB sugar
  • 1 cup half-and-half
  • 1/2 tsp Vanilla extract
  • 6 TB Rock salt (very inexpensive)
  • 1 pint-size plastic zip lock bag
  • 1 gallon-size zip lock bag
  • Crushed Ice

Directions

Combine the sugar, half-and-half and vanilla in pint-size zip lock bag and seal. Fill the gallon-size zip lock bag one-half full with crushed ice. Add the rock salt. Place the sealed, pint-size zip lock bag into the gallon size zip lock bag and seal.

Now here comes the hardest part:

Shake the gallon-size bag for 5-7 minutes or until the ice cream hardens. Open the small zip lock bag and enjoy.

Now this doesn't make a very large amount. Just enough to satisfy the maker of the concoction for all the hard work it took to shake. But the ice cream is good and smooth.

Fire and Ice Tomatoes

Ingredients

  • 6 large ripe tomatoes
  • 1 large green pepper
  • 1 red onion
  • 3/4 cup vinegar
  • 1 1 /2 tsp. celery salt
  • 4 1/2 tsp. sugar
  • 1/8 tsp. mustard seed
  • 1/2 tsp. salt
  • 1/8 tsp. red pepper
  • 1/8 tsp. black pepper
  • 1/4 cup cold water
  • 1 cucumber

Directions

Skin and quarter tomatoes. Slice pepper in strips and red onion in rings. Place all together. Make sauce from next 8 ingredients; boil hard for 1 minute. Pour over vegetables while hot. Chill. Just before serving pare and slice cucumber and add.

Hearty Italian Soup

Ingredients

  • 1 Italian sausage link, cut into 1/2-inch pieces
  • 1 small onion, chopped
  • 1/2 medium green pepper, chopped
  • 1 can (14-1/2 oz.) Italian diced tomatoes, undrained
  • 1-1/2 cups water
  • 1 can {8 ounces} tomato sauce
  • 1 tsp. sugar
  • 1 tsp. chicken bouillon granules
  • 1/4 tsp. garlic powder
  • 1/3 cup uncooked elbow macaroni
  • 2 Tbsp. shredded part-skim mozzarella cheese

Directions

In a large saucepan, cook the sausage, onion and green pepper until sausage is browned; drain. Stir in tomatoes, water, tomato sauce, sugar, bouillon and garlic powder. Bring to a boil. Reduce heat; cover and simmer 15 minutes, stirring occasionally. Stir in macaroni. Cover and simmer 10 to 15 minutes longer or until macaroni is tender. Sprinkle with cheese.

Yields: 4 cups.

Chocolate Pie with Butter Crunch Crust

Ingredients

Crust:

  • 1/2 cup butter
  • 1/4 cup brown sugar
  • 1/2 cup chopped pecans or walnuts
  • 1/2 cup flaked coconut (opt.)
Filling:
  • 6 almond Hershey candy bars
  • 1/3 cup milk
  • 18 marshmallows
  • 1 cup whipping cream, whipped

Directions

Mix ingredients in oblong pan. Bake at 400 degrees F for 15 minutes. Remove from oven and stir with a spoon. Immediately press mixture in 9 inch buttered pie pan. Chill.

For filling: In double boiler, dissolve Hershey bars, milk and marshmallows. Chill. Cold in whipped cream and pour into chilled crust. Keep refrigerated until serving time.

Add Peanut Butter to Oatmeal

I make instant oatmeal for breakfast several times a week. I've started adding a tablespoon of peanut butter after it's been cooked. I stir it in with a little bit of milk. It tastes delicious, and adds a little boost nutritionally. My kids absolutely love it!
