Hash Browns and Black Bean Casserole

I am looking for a recipe! I ate these wonderful potatoes at a party but can't find a recipe for them. They had hash browns and black bean and cheese in the casserole. Does anyone have a recipe with at least these three items in it?

Butternut Squash Pudding (Microwave)

Ingredients

  • 1 medium butternut squash
  • 2 eggs, beaten
  • 1/2 cup half and half
  • 1/3 cup sugar
  • 2 Tbsp. butter or margarine
  • 1/2 tsp. ground cinnamon
  • 1/8 tsp. ground nutmeg
  • 1/2 tsp. grated lemon rind
  • 2 tsp. lemon juice
  • sweetened whipped cream

Directions

Pierce squash 6 or 8 times with a fork. Place squash on paper towels in microwave oven. Microwave, uncovered, at high 16-18 minutes, turning squash after 8 minutes. Let stand 5 minutes. Cut squash in half, and remove and discard seeds. Scoop out pulp, and discard shell. Combine squash pulp, egg, and next 7 ingredients in a mixing bowl; beat a medium speed of an electric mixer until smooth. Spoon squash mixture into an 8 inch square baking dish. Microwave, uncovered, at high 15 minutes; stir. Microwave at medium for 5 minutes. Let stand 5 minutes. Serve with sweetened whipped cream.

Pumpkin Snow Cookies and Cream Ice Cream

Last night I discovered that I could make quick "Pumpkin Snow Cookies and Cream Ice Cream" from our shaved ice machine ! Here's the 'from memory' recipe I used. It's yummy if you love pumpkin, love "snow ice cream" that tastes like Ice Milk from the dairy case a little bit, because of the melting "snow". Have your bowls/large cups and spoons chilled as you start.

Ingredients

  • 1 can of evaporated milk
  • 1 can pumpkin
  • 3/4 cup sugar, or substitute (I am out)
  • 1/2 cup dry milk
  • 1 tsp. vanilla flavoring
  • 1 tsp. almond flavoring
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 12 crushed "duplex" cookies (vanilla/chocolate)

Directions

Mix all ingredients together, adding crushed cookies last. Shave three cups solid ice and pour above mix over ice in bowl/cup, adding more on top of mix and stir lightly. Serve quickly and enjoy!

Sausage-Stuffed French Loaf

Ingredients

  • 1 loaf French Bread
  • 1/2 lb. bulk pork sausage
  • 1/2 lb. ground chuck
  • 1 medium onion, chopped
  • 1 cup shredded mozzarella cheese
  • 1 egg
  • 1/4 cup chopped fresh parsley
  • 1 tsp. Dijon mustard
  • 1/4 tsp. fennel seeds
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. butter or margarine
  • 1 clove garlic, crushed

Directions

Cut off ends of French bread loaf, and set ends aside. Hollow out the center of loaf with a long serrated bread knife, leaving a 1/2 inch thick shell. Position knife blade in food processor bowl; add bread removed from inside the loaf. Process to make coarse crumbs. Set bread shell and crumbs aside. Cook sausage, beef, and onion in a skillet until meat is browned, stirring to crumble meat; drain well. Add 1 cup reserved bread crumbs, cheese, and next 6 ingredients, mixing well. Spoon meat mixture into bread shell, and replace loaf ends, securing with wooden picks. Melt butter in a small saucepan; add garlic, and cook about 1 minute. Brush butter mixture over loaf. Wrap loaf in aluminum foil, leaving open slightly on top. Bake at 400 degrees F for 20 minutes or until thoroughly heated and cheese is melted. Cut into 4 pieces.

Peach Glazed Carrots

Ingredients

  • 1 lb. carrots, scraped and sliced
  • water
  • 1/3 cup peach preserves
  • 1 Tbsp. butter or margarine, melted

Directions

Cook carrots in 1 cup boiling water in a saucepan 5 minutes or until crisp-tender; drain. Combine peach preserves and butter; stir into carrots. Cook over low heat until carrots are thoroughly heated.

Berry Trifle

Ingredients

  • 1 Baked Angel Food Cake
  • 1 Large package red jello
  • 1 Large Ctn. cool whip
  • 1 2 Lb. package frozen mixed berries
  • 1 Qt. Fresh Strawberries, sliced.
  • 4 Kiwi

Directions

Make Jello as directed and put in fridge an hour before assembly. In a clear glass tall bowl, layer ingredients starting with broken up pieces of cake, jello, berries(mixed together) and cool whip. Repeat until just before last layer, place slices of KiWi down sides so they show. End with cool whip and lay remaining slices of Kiwi on top.

Grilled Corn with Chive Butter

Ingredients

  • 6 medium ears sweet corn, in husks
  • 1/2 cup butter, melted
  • 2 Tbsp. snipped chives
  • 1 Tbsp. sugar
  • 1 1 /2 tsp. lemon juice
  • salt and pepper

Directions

Soak corn in cold water for 1 hour. In a small bowl, combine the butter, chives, sugar, lemon juice, salt and pepper. Carefully peel back corn husks to within 1 inch of bottom; remove silk. Brush with butter mixture. Rewrap corn in husks and secure with kitchen string. Grill corn, uncovered, over medium heat for 25-30 minutes, turning occasionally.

Hopping John

Ingredients

  • 1 cup sliced celery
  • 2/3 cup chopped onion
  • 1 clove garlic, minced
  • 1 Tbsp. vegetable oil or bacon drippings
  • 4 cups water
  • 2 cans condensed chicken broth, undiluted (10 3/4 oz. each)
  • 1 package frozen black eyed peas
  • 1/2 lb. cooked ham, cut into cubes
  • 1/4 tsp. crushed red pepper
  • 1 bay leaf
  • 3 cups cooked long-grain rice

Directions

Saute' celery, onion, and garlic in vegetable oil in a large Dutch oven until tender. Add water and remaining ingredients except rice. Bring to a boil; cover, reduce heat, and simmer 40 minutes or until peas are tender. Remove and discard bay leaf and serve mixture over rice. Note: To cook rice with black-eyed peas, stir 1 cup uncooked long-grain rice into peas after 40 minutes, and simmer an additional 35 minutes.

Tomato Juice Cocktail

Ingredients

  • 1 (46 oz) can tomato juice
  • 1 Tbsp. instant minced onion
  • 1 Tbsp. sugar
  • 1 tsp. Lawry's seasoning
  • 1 tsp. powdered horseradish
  • 1/8 tsp. pepper
  • 1 bay leaf
  • 6 whole cloves
  • 1 whole allspice
  • 3 Tbsp. white vinegar

Directions

Combine all ingredients except vinegar in a large saucepan; bring to a boil. Reduce heat, and simmer 15 minutes, stirring occasionally. Remove from heat; stir in vinegar, and let cool. Strain and discard bay leaf, cloves and allspice. Cover and chill 3-4 hours. Pour beverage into glasses.

Mom's Apple Pie

Ingredients

  • 1 package ready-made pie crusts
  • 1 tsp. flour

Filling:

  • 6 cups apples, thinly sliced and peeled
  • 3/4 cup sugar
  • 2 Tbsp. flour
  • 3/4 tsp. cinnamon
  • 1/4 tsp. salt
  • 1/8 tsp. nutmeg
  • 1 Tbsp. lemon juice

Directions

Heat oven to 425 degrees F. Prepare pie crust according to package directions for two-crust pie using 9 inch pie pan. In large bowl, combine all filling ingredients; toss lightly. Spoon apple mixture into pie crust-lined pan. Top with second crust and flute; cut slits in several places. Bake at 425 degrees F for 40-45 minutes or until apples are tender and crust is golden brown. Note: Two (20 oz.) cans of apple fruit pie filling can be substituted for apple filling above. Bake as directed. Cover edge of crust with strips of foil after 15-20 minutes of baking to prevent excessive browning.
