Greek Fries

Ingredients

  • 6 or 7 sliced potatoes with skins on
  • 2 pounds of cooked diced ham or bacon, whichever you prefer
  • 2 onions, sliced
  • 2 bell peppers, sliced
  • 1 large bottle of Italian dressing
  • salt and pepper

Directions

You can cook this on grill or in oven in 12 inch foil pan covered with foil. Start with layer of potatoes on bottom. Salt and pepper. Add ham or bacon or both on top of potatoes. Add pepper and onion next and keep layering like this until pan is full. Pour Italian dressing over when finished. If you like you can add some grated cheese on top now. Cover with foil and bake in oven for one hour or on top of grill. Very good

These sound very yummy and I am definitely going to try this recipe but I have to tease you ;-) These should be called Italian Fries ;-)

My Greek Papa (Grampa) would be scratching his head wondering why these ingredients are being considered Greek and not Italian ;-) Here's a true Greek Fries recipe:

Greek Fries

4 cups vegetable oil
6 large potatoes
1 cup feta cheese, crumbled
2 tbls fresh lemon juice
Dried oregano to taste
Salt to taste
Pepper to taste

Peel and cut potatoes into 1/4-inch thick slices.
Soak in water for 2 hours.
Remove fries from water and dry well.
Heat the oil in a deep fryer or deep pot until it reaches 375 degrees F.
Cook potatoes in batches in oil for 3 to 5 minutes or until crispy and brown.
Drain on paper or cloth towels.

Season the fries with salt, pepper and dried oregano.
Sprinkle with a little fresh lemon juice and crumbled feta.
