Pumpkin Pie Pudding

First off, the crock pot is a great time and energy saver. Secondly, especially in the fall, more recipes that use pumpkin are good to have, as after Hallowe'en, pumpkins can be found very cheaply.

Ingredients:

  • 2 cups pumpkin puree
  • 1 1/2 cup milk
  • 3/4 cup sugar
  • 1/2 cup Bisquick
  • 2 eggs
  • 2 Tbsp. butter, melted
  • 1 1/4 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. cloves
  • 1/8 tsp. ginger
  • 2 tsp. vanilla

Directions:

Grease a 4 quart crock pot. In a bowl, combine all the ingredients and mix until fully blended.

Pour the batter into the crockpot and cook on high for 3 - 4 hours, or on low for about 6. Check halfway through, then every 30 minutes thereafter. When it's done cooking, the batter will have browned and will crack in a few places. Serve at room temperature

This can also be made in the oven by baking at 350 degrees F for 50 - 55 minutes

Pumpkin Pie Pudding

Anyone who likes Pumpkin Pie will love this dessert.

Ingredients:

  • 1 (15 oz.) can solid pack pumpkin
  • 1 (12 oz.) can evaporated milk
  • 3/4 cup sugar
  • 1/2 cup biscuit/baking mix
  • 2 eggs, beaten
  • 2 Tbsp. butter or margarine, melted
  • 2 1/2 tsp. pumpkin pie spice
  • 2 tsp. vanilla extract
  • whipped topping

Directions:

In a large bowl, combine the first eight ingredients. Transfer to a slow cooker coated with nonstick cooking spray. Cover and cook on low for 6-7 hours or until a thermometer reads 160 degrees F. Serve in bowls with whipped topping if desired.

3 1/2 TO 5 Hours Cooking Time
