Leftover Turkey and Mashed Potato Bake

Don't know what to do with your Thanksgiving dinner leftovers? Try this...

Leftover Turkey and Mashed Potato Bake

Ingredients:

  • 3 c hot mashed potatoes
  • 1 c shredded cheddar cheese
  • 1 can fried onions
  • 1 1/2 c shredded, cooked turkey
  • 1 package frozen mixed peas & carrots (10 oz)
  • 1 can cream of chicken soup
  • 1/2 c milk
  • 1/2 tsp dry mustard
  • 1/4 tsp garlic powder
  • 1/4 tsp white pepper

Directions:

Combine potatoes, 1/2 c cheese, and 1/2 c fried onions. Spoon into a greased 1 1/2-quart casserole dish. Spread across bottom and up sides of dish. Combine next 7 ingredients (turkey through pepper). Pour into potato shell. Bake uncovered at 375° for 30 minutes. Top with remaining cheese and onions.. Bake for additional 5-10 minutes. Let stand 10-15 minutes before serving..

Turkey Soup Instructions

Making Turkey Soup

Start that Turkey Soup after dinner. Strip all of the good meat off the bones and put the meat away in the refrigerator. Take all the leftover bones and skin and bits of meat that are too hard to pull off put them in a large pot with COLD water.

You can also throw in a stalk of celery and a half an onion if you like. Turn the burner on very Low heat and let it warm up slowly and cook all night. You could also use the oven for this and set it at 250 degrees F if you are worried about having your burner on all night. (see tomorrow)

Tomorrow

Strain and refrigerate broth. Throw out bones and bits of meat. All the good from them is in the broth. When fat is congealed, skim off.

Then take leftover turkey meat, bits of gravy, mashed potatoes, dressing (take it easy on dressing and potatoes. If you have lots of them leftover you may not want to add it all), yams, vegetables and throw them into the broth you made yesterday. The best turkey soup ever.

We started with the idea of sharing Thrifty Tips in 1997, that everyone had good ideas and if we could create a way to pool all of our knowledge, we could create a great resource. It has taken until this year to become the vibrant community that we imagined. It just goes to show you that if you stick with something, it may take a while but sooner or later your ideas will flourish.

Thanks to all of the staff (my family: Lewis, Fisher and Fletcher) on this end whose hard work created the terrific site and the continued editing of content.

Don't Buy Frozen Shredded Potatoes

Place potatoes in microwave and cook them until they are almost done. You can then peel and shred them for recipe calling for shredded potatoes. I keep extra whole potatoes in the refrigerator for fast use next time I want shredded potatoes.

Peroxide for Laundry and Carpet Stains

I keep a spray bottle of peroxide in my laundry room. It's good for spraying on grass or blood stains, etc. Also, I have a light colored carpet and a quick spray of peroxide with a little dabbing makes the stain disappear. Test in an inconspicuous area first.

Fast And Easy Meal Made With Canned Spam

Ingredients:

1 can Spam
3 cups shredded potatoes
1 med onion
3 Tbls. olive oil
Dash of black pepper

Directions:

Hold the salt and let each individual salt to taste when at the table. Spam is rather salty.

Pour olive oil in frying pan. Chop onion. Saute onion until clear. Chop Spam into any size bits. Add Spam and three cups shredded potatoes to onion in frying pan. Let one side brown, then turn over with spatula and brown other side. I sometimes put them on a paper towel in serving dish, mash slightly to remove some of the oil, then remove paper towel and put directly in the serving dish. Fast and easy if you have your potatoes already cooked and ready to shred

Thanksgiving Use for Halloween Decorations

I have several Halloween decorations of pumpkins with faces, like planters, centerpieces etc. Simply turn them around to the backside and you have a plain pumpkin for display over Thanksgiving.

Coloring Chipped Lamp with Marker

I had a black lamp that got chipped when we moved it. I just colored the chip in with a black magic marker. I did the same thing with my coffee table using a brown marker. On my colored wall, I patched a hole with toothpaste and baking soda, then color matched it with magic marker. Same thing with my black leather sofa. It had a small scuff in the side and a marker covered the scuff.

Fleece Scarfs - Quick, Easy And Inexpensive Christmas Gift

Go to the fabric store, and buy one yard of pretty fleece, preferably in a neutral color. Ask the sales person to cut it in 12 inch increments. Take one of the cut pieces, lay it out, and trim off the ends. Then make fringe about one inch apart, six inches long on each end. Tie a knot in each fringe. Now you have a nice, pretty scarf to give as a gift. Duplicate your efforts on the remaining two pieces. You now have three Christmas presents to give, at a cost of under 10.00!

Dry Frizzy Hair

For immediate relief of dry, frizzy or static hair during the winter...
grab a small amount of any lotion, rub between fingers and then through your hair.

P.S. To avoid the greasy grungy look, make sure you comb lotion through lower parts of the hair and away from the roots

Finding Dropped Earrings

If you drop a small object (say, an earring) and can't locate it, put a pair of nylons over your vacuum hose and use the hose to slowly vacuum over the area. You will pick up the lost object without it being sucked up into the vacuum.

Savings Over Time Add Up

Sometimes, a way of saving money may seem too trivial to bother with. It is important to remember that the real savings occurs over time. If you cut open a toothpaste tube to get the very last of the toothpaste, you might only get enough for 2 more days. Ultimately, after using up 15 tubes of toothpaste this completely, you will have stretched it out by an extra month! When you consider all the little ways you can save "trivial" amounts of money, you can see just how much it collectively adds up!

Leftover Turkey Ideas

You don't have to stuff yourself with all that turkey right away. Cut it up into bite sized pieces, and measure the turkey into individual freezer bags. Divide the turkey into the amounts you normally use turkey or chicken in recipes. Next time you want to make a casserole or something, your turkey is all cooked and measured for you, and you just have to toss it in with the other ingredients for a quick dinner. And it isn't as boring as two weeks of turkey sandwiches!

Breast Side Down

Here's a tip for an outstanding Thanksgiving Turkey. Cook it with the breast side down. Yep, turn that bird upside down and insert a stick of butter in the cavity, put in a roasting bag and cook that baby. You will have the juiciest turkey you've ever had.(all the juice stays in the bird) (a friend of mine gave me this tip, he has a catering business) I always put mine on the night before we eat on about 250 degrees and let it cook all night.

There is no need to watch or baste. Just take it out the next morning and go ahead and pick it all of the bone and put in a covered container in the fridge. When you get ready to eat, take out as much or as little as you need and warm it up in the microwave and serve. Your oven will be free the day you eat to get your other items prepared. (much easier) I get LOTS of compliments on the meat and I have a hassle free meal and enjoy being with my company which is what it's about anyway. Many Blessings!!!!

Shopping for a Photographer

We have a wedding coming up next summer and in order to cut one big expense, I suggest doing a LOT of shopping around for a photographer. You can find a good photographer at a reasonable price if you take the time to shop around. Some charge thousands of dollars to take pictures of the big day! We found a photographer that is more than reasonable. Charges a low hourly sitting fee, which includes all the proofs. This is also something he does for senior pictures! Shop around and ask your friends, family, and neighbors for referrals!

Saving on Auto Insurance for Teens

Vehicle insurance is so expensive, especially if you have teenagers! One of the things many people seem to forget is that most companies will give you a discount on your policy if your child gets good grades. This even goes for children in college that are still on your insurance. It's worth checking into!

We homeschool, but I keep track of my children's grades and the insurance company will even honor the grades my children get, even though they are homeschooled!

Faster Baked Potatoes

To bake potatoes faster, start them warming in microwave a minute or so to get them heated trough and through. Pop in oven and they will bake faster for your meal. Really good for when you are barbecuing outdoors. They will be ready by the time the meat is done and your salad is made.

Organizing Emergency

I have a an organizational emergency! My friends Did and Sabina live together in Brooklyn, NY and they live STY HIGH! I love the TLC show 'Clean Sweep' but they are not accepting submissions now and my friends need help desperately. The house is dirty and chaotic and cluttered to the nth degree. Is there a service you can refer me to that does what TLC's Clean Sweep does that would be able to come out and put them through "the program" here in NY? Emergency 911 here!
