Sweet Potato Souffle
- 3 cups mashed sweet potatoes
- 1/2 cup sugar (or sugar substitute)
- 3 Tbsp. (lowfat) margarine
- 4 beaten egg whites (stiff, not dry)
- 1/2 cup skim milk
Whip all ingredients, except egg whites, until light and fluffy. Gently fold in egg whites. Season with cinnamon, nutmeg, and ginger to taste. Pour into greased (cooking spray) casserole. Bake approximately 25 minutes at 350 degrees F.
