Cool Gazpacho Dip
- 1 package cream cheese, softened (8oz)
- 1/4 cup sour cream
- 1/2 cup shredded cheddar cheese
- 2 Tbsp. minced fresh cilantro
- 1 garlic clove, minced
- 1 small tomato, seeded and chopped
- 2 green onions, sliced
- 1/3 cup chopped cucumber
In medium bowl, combine cream cheese and sour cream; mix well. Stir in cheddar cheese, cilantro and garlic. Cover; chill 2-3 hours for flavors to blend. Transfer to 8 or 9 inch pie plate just before serving. Top with tomato, onion and cucumber. Serve with tortilla chips.
