Salmon Loaf

Ingredients:

  • 1 large can salmon
  • 4 eggs, beaten
  • 2 tomatoes, cooked until soft
  • 2 green peppers, chopped
  • 4 or 5 soda crackers, crumbled
  • 1 onion, chopped and cooled until soft
  • 1 tsp. ketchup
  • 1 cup mashed potatoes
  • 1 cup corn flakes, crushed
  • 1/4 tsp. salt

Directions:

Mix all ingredients; put into baking dish. Bake at 300 degrees F until brown.

Recipe: Salmon Loaf

Ingredients:

  • 1 can cream of celery soup
  • 1/3 cup salad dressing - (Miracle Whip)
  • 1 egg
  • 1/2 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1 Tbsp. lemon juice
  • 1 lb. can salmon, drained
  • 1 cup cracker crumbs

Directions:

Flake drained salmon. Mix together all ingredients. Place in greased loaf pan. Bake at 350 degrees F for 1 hour. Unmold and slice. Serves 6.

Recipe: Salmon Loaf

Ingredients:

  • 2 cups canned salmon
  • 2 cups soft bread crumbs
  • 1 cup milk
  • 2 eggs, beaten
  • 2 lb. minced green or red peppers
  • 1/2 tsp. salt
  • 2 Tbsp. butter

Directions:

Flake the fish. Combine all ingredients, including liquid from salmon. Shape in a loaf and bake in greased baking pan at 350 degrees F for 40 minutes.

Ingredients

  • 1 lb. can salmon
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. paprika
  • 2 tsp. lemon juice
  • 2 eggs
  • 1/2 cup cooked rice
  • 1/2 cup cracker crumbs
  • 1/2 cup hot milk

Directions

Mix all ingredients together and bake in well greased loaf pan about 1 hour at 350 degrees F.

If you don't want to wait the hour for the loaf to bake, make your salmon recipe into burgers and fry them. They will be ready to eat in 10 minutes. You probably need to make them "drier" by using less liquid in the recipe so that the burgers hold their shape. (04/04/2009)

Recipe: Salmon Loaf

Ingredients

  • 1 lb. salmon
  • 1 egg, beaten
  • 1 cup milk
  • 1 tsp. salt
  • 1/4 t. pepper
  • 1/2 small onion, finely chopped
  • 2 cups bread crumbs

Directions

Break the salmon apart with a fork and remove the bones. Mix the egg, milk, salt, pepper and onion with the salmon. Add the bread crumbs and mix together. Bake at 375 degrees F for 1 hour. Serves 4.

Recipe: Salmon Loaf

Ingredients

  • 1 can of salmon
  • 1 1/2 cups bread crumbs
  • 2 Tbsp. lemon juice
  • 1/2 tsp. salt
  • 2 beaten eggs
  • 1/4 cup milk
  • 1 can of cream of mushroom soup (to be used once loaf almost done)

Directions

Mix all ingredients (except mushroom soup) together and put in a greased loaf pan. Bake at 350 degrees F for 40-60 minutes. Fifteen minutes before you are ready to take salmon loaf out of oven, pour over it one can of HEATED cream of mushroom soup. Put back into oven and finish baking.

Ingredients

  • 3 beaten eggs
  • 1 1/2 cups milk
  • 1 large can salmon
  • 2 cups soft bread crumbs
  • 1 small onion, minced fine
  • 1 Tbsp. melted butter
  • 1 tsp. lemon juice
  • 1/4 tsp. poultry seasoning
Cheese Sauce:
  • 1 can cream of celery or cream of mushroom soup
  • 1/3 cup milk
  • 1/2 cup shredded cheddar cheese

Directions

Mix ingredients in order given and bake in loaf pan 1 hour at 325 degrees F. Serve with cheese sauce (below).

For Cheese Sauce: Combine all ingredients in saucepan and heat, stirring often until cheese is melted.

Salmon Loaf

Here's my mom's recipe; it's still the meal I request for my birthday supper.
  • 1 lb. can salmon
  • milk
  • 1 egg
  • 1 1/2 cups cracker crumbs
  • 1 tsp. chopped onion
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Heat oven to 350 degrees F. Drain liquid from salmon into a measuring cup; add milk to make 3/4 cup. Flake salmon, removing bones and skin. Blend in egg; stir in the rest of ingredients. Spoon lightly into a greased 1 quart baking dish. Bake 45 minutes.

You didn't request it, but here's the white sauce that we pour over the salmon loaf (and mashed potatoes, peas, etc.) :)

White Sauce

  • 1/4 c margarine
  • 1/4 c flour
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 2 c milk

Melt butter in a saucepan over low heat. Blend in flour, salt and pepper. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat; stir in milk. Heat to boiling, stirring constantly. Boil and stir one minute.

Salmon Loaf

This is a recipe the cook in a hospital that I worked at made at least once a month. Everyone always asked her for the recipe.
  • 1 15 oz. can of salmon
  • 2 beaten eggs
  • 2 Tbsp. finely chopped onion
  • 1/2 cup grated cheddar cheese
  • 1 Tbsp. lemon juice
  • crushed crackers, about a handfull
Drain salmon, save liquid. Add milk to liquid to make 1/2 cup liquid. Mix all ingredients together. Put in sprayed loaf pan Bake 350 degrees F about 40 minutes until set. (02/14/2007)
