Hearty Mushroom Soup

So glad it's almost soup weather again! This is so good on a cold night!

Ingredients:

  • 1 1/2 lb. hamburger
  • 2 cans of mushrooms, drained
  • 1/2 cup diced celery
  • 1/2 cup diced onion
  • 2 cups diced potatoes
  • 1/2 cup diced carrots
  • 1/4 cup rice, uncooked
  • 1 quart tomatoes and juice, mashed or blended
  • 1 quart water
  • salt and pepper, to taste

Directions:

Brown beef and drain. Combine tomatoes and water in kettle. Add mushrooms, celery, carrots, onion, and meat. Simmer 30 minutes. Add rice, potatoes, and seasonings. Simmer 45-60 minutes or until veggies are tender.

Servings: 12
Prep Time: 20 Minutes
Cooking Time: 45-60 Minutes

There's no mushrooms in there.

Sorry! The recipe does need to have 2 cans of mushrooms, drained, added to it. I just missed typing in the particular ingredient when I sent the recipe in. I agree that it does have a funny sounding name considering it has many more ingredients than just mushrooms in it! Very good soup! Enjoy!

Since this is called Mushroom soup one would expect it to contain mushrooms. I've looked the recipe over carefully and saw no sign of a mushroom present. Did you perhaps mix up the recipe?
