Attach Recipes to Homemade Mixes

I make homemade food mixes and store them in half gallon or gallon jars. Using a rubber band, I keep the recipe attached to the jar. The next time I have to make another batch, the recipe is readily available. Also, on the cards I have the cooking/baking instructions and any special notes. Keeping the recipes readily available makes it easier and faster for me to make the mixes.

I also do this for any homemade cleaning mixes that I use in my home.

Preserve It Naturally

People always ask how come I buy very little at the grocery store. I own a Rival Seal A Meal- vacuum storage unit and a Excalibur dehydrator.

I never have left overs, I use my dehydrator to make powders of leftover sauces, dry veggies and fruits, refresh stale crackers and chips, and make my own cheeses, yogurt and grain products. I buy staples: salt, powdered milk, and rennets.

All foods are stored in sealed packages with my Rival, I can make my own bags at whatever size I need, just open and reseal. I buy fruits and veggies in season. I also watch prices at grocery stores.

When I get my home I will again have a garden and compost to save myself money. I learned old school and passed it on to my kids.

Greasing Pans

Once you remove the butter stick from it's wrapper use the residual butter on the wrapper to grease your baking pans. If you don't need to grease right away, just place it in a container in the fridge until needed :-)

Creamed Dill Potatoes

Mild and light flavored potatoes in a cream sauce.

Ingredients:

  • 6 small fresh new potatoes
  • 1/4 cup fresh dill (or frozen dill)
  • 1 pint cream
  • Salt and pepper

Directions:

Find a casserole bowl. Preheat the oven at 300 degrees F. If new potatoes, do not peel. Otherwise peel and slice. Cut up the dill and put in casserole. Season to taste.

Servings: 6
Time:20 Minutes Preparation Time
50 Minutes Cooking Time

Lacy Oatmeal Cookies (Gluten Free)

These cookies always get rave reviews so this has long been one of my favorite recipes. Also, the recipe is gluten free! I was glad to share it with my friend who has celiac disease.

Ingredients:

  • 1 cup packed brown sugar
  • 1/2 cup shortening
  • 1/4 cup butter/margarine
  • 2 cups quick cooking oatmeal
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 egg, beaten
  • 2 pieces of parchment baking paper

Directions:

Combine brown sugar, shortening, and butter in pan and melt over low heat.

Remove from heat; add oatmeal, soda, and salt. Add egg; mix well.

Drop by teaspoons 3 inches apart (they spread a lot!) on cookie sheet topped with parchment paper. Bake at 375 degrees F. for 6 to 7 minutes.

Slide parchment paper from cookie sheet and allow cookies to cool completely before removing from parchment paper. While one batch is cooking, prepare next batch on second piece of parchment paper. Reuse parchment paper for each additional batch of cookies. Makes 4 to 6 dozen of very thin and delicious cookies.

Bubba's Lemonade 101

Ingredients:

  • 2 or 3 ice cubes
  • 2 Tbsp. lemon juice
  • 1-1/2 Tbsp. lime juice
  • 2 Tbsp. superfine sugar
  • 6 to 8 ice cubes
  • 2 cups cold water

Directions:

Pour lemon and lime juice into a pitcher, add sugar and stir until dissolved. Add ice cubes and water and stir. Serve in tumblers.

Asian Marinated Grill Kabobs

Yummy whether one inch cubes of beef, pork or chicken :-)

Ingredients:

  • 1/2 cup soy sauce
  • 1/2 cup rice wine vinegar
  • 1/2 cup chunky style peanut butter
  • 1/3 cup chopped fresh cilantro
  • Juice from 1 lemon
  • 2 Tbsp. honey
  • 1 tsp. sesame oil
  • 1 Tbsp. fresh grated ginger
  • 2 cloves minced garlic
  • 1/2 tsp. cayenne

Directions:

Combine and mix all ingredients together. Marinade meat of choice for about 1 hour and then grill.

Robin's Recipe Corner:

Tuna Cheddar Sandwiches

Ingredients:

  • 1 can tuna (6oz.), drained
  • 3/4 cup chopped cucumber (about 1/2 medium)
  • 1/4 cup mayonnaise or Miracle Whip
  • 3 English muffins, split and toasted
  • 6 slices cheddar or co-jack cheese

Directions:

Mix all ingredients except muffins and cheese. Spread tuna mixture over cut side of each muffin half. Arrange on microwave rack or 10 inch plate. Microwave, uncovered, on high 2-3 minutes or until mixture is hot. Top with cheese. Microwave, uncovered 30-60 seconds or until cheese begins to melt. Makes 6 open-face sandwiches.

Carrot Loaf

Ingredients:

  • 2 1/2 cups cooked carrots
  • 1 Tbsp. minced onion
  • 3 Tbsp. melted butter
  • 3 eggs, separated
  • 1 cup dry bread crumbs
  • 2 cups milk
  • salt and pepper, to taste

Directions:

Mash cooked carrots, add onion, butter, beaten egg yolks and seasoning. Add crumbs and milk. Fold in beaten egg whites last. Pour into greased loaf pan. Bake at 350 degrees F for 45 minutes. Can be served with your favorite cheese sauce, if you like.

Chicken Casserole

Ingredients

  • 1 pkg. wild rice mix
  • 3 cups chopped cooked chicken
  • 1 can cream of celery soup
  • 1 jar diced pimento (4oz.)
  • 1 onion, chopped
  • 2 cups French cut green beans, drained
  • 1 cup mayonnaise
  • 1 can water chestnuts
  • salt and pepper, to taste

Directions

Cook wild rice mix using package directions. Add remaining ingredients, mixing well. Pour into buttered 3 qt. casserole. Bake at 350 degrees F for 30 minutes.

Chocolate-Covered Cherries

  • 1/3 cup butter
  • 2 cups marshmallow creme
  • 1 tsp. almond extract
  • dash salt
  • 4 cups powdered sugar, sifted
Chocolate Coating:
  • 1 small pkg. chocolate chips
  • 1/16 lb. paraffin
Melt coating ingredients over double boiler and keep over water while dipping.

Mix remaining ingredients and place in refrigerator until firm. If mixture is sticky; add powdered sugar. Make a small patty and place a maraschino cherry in center and roll into a ball. Chill and dip in chocolate (use a toothpick to dip). Drain cherries about 1 hour before covering.

Note: Paraffin wax comes in 1 lb. package. Each pound has 4 (1/4 lb.) pieces. Use 1/4 of 1 section. It is also very flammable and can cause burns if it gets on your skin.
