Fish Buying Tips

Fish meat should be firm, not soft or mushy. Fish eyes should be shiny and protrude from the fish. If they are dull or sunken, the fish should be avoided. The fish should smell fresh and not overly fishy or musty. The skin should have a nice sheen and the scales should not be coming off.

Gills must be red, eyes must pop out and be bright and shiny, when the fish is fresh when you pick the tail it will have a elastic effect and the flesh will be tender.

Once, when buying fish at a chinese supermarket, a chinese lady gave me this tip: look at the gills. The color should be a fresh red, almost pink, not dark red or almost black; avoid those. I've been doing it until this day and haven't had a problem. It works. Hope it works for you as well. God bless you. Maria
