Removing Stuck Lids from Jars

I like to use Marmite in my soups and stews for additional depth of flavor, but that lid glues itself shut to the jar and it's an impossible task to get it open. It is kept it in the refrigerator to ensure freshness, so this may be a contributing factor. I have discovered a method of getting the lid off the jar with a minimum of fuss.

  1. When replacing the lid on the jar, barely tighten it.

  2. Hold the jar under HOT running water a few minutes.

  3. The lid will now unscrew easily.

  4. Repeat step #1.

As a note, if you would like to try this item, spoon out the necessary amount into a coffee cup, add boiling water or very hot cooking liquid, stir vigorously and dissolve before adding to the cooking pot. Otherwise, you spoon out a glob into the pot, and then spend 5 or more minutes chasing it around the pot, trying to dissolve and mash it into oblivion.

Marmite is very popular in vegetarian cooking for flavor as meat is not used. I buy it at Kroger Grocery store and various health food stores around town. Central Market also carries it and their well known standard Texas grocery store name is HEB.

Scramble Eggs in a Ziplock Bag

When having a crowd over for breakfast/brunch instead of cooking scrambled egg orders with everyone wanting different ingredients, get everyone's order and put in plastic bags with each persons name on top or assign a number to each person. Put all the bags in a deep pot of hot boiling water. Boil for 5 to 10 minutes, depending on how many bags you boil. Saves on cleanup with everyone having warm food.

Source: My daughter Alisha served eggs this way for her coworkers, don't know where she got it. She is always coming up with strange ways to cook. Doesn't like the cleanup.

Today's Contest Recipes:

Round Steak Surprise

Gravy style served over rice.

Ingredients:

  • 1 lb. round steak
  • 1 yellow onion
  • 1 green bell pepper
  • 2 cans of golden mushroom soup
  • 1 can cream of mushroom soup
  • flour
  • pepper to taste
  • cooked white or brown rice

Directions:

Cut the round steak into strips, trimming the fat. Put meat in a gallon size Ziploc bag with enough flour and pepper to coat meat strips. Shake a few times until well coated. Brown the meat with the onion and bell pepper with just a bit of olive oil to prevent sticking. Add the cans of soup, and simmer for 1 hour.

Serve on rice of your choice. I like to serve cottage cheese with pineapple with it.

Servings: 6-8
Time:10 Minutes Preparation Time
1 Hours Cooking Time

Broccoli Salad

Cool crunchy and oh so good!

Ingredients:

  • 1 bunch raw chopped broccoli
  • 1 lb bacon cooked and crumbled
  • 1 med. red onion chopped
  • 1 cup unsalted sunflower seeds
  • 1/2 cup golden raisins
  • 1/4 to 1/2 cup of grated cheeses (cheddar, longhorn)
Dressing
  • 1 cup mayonnaise
  • 1/3 cup granulated sugar
  • 2 Tbsp. cider vinegar

Directions:

Mix the salad ingredients together in a bowl to hold it all.

Mix the dressing ingredients together and pour over the salad stirring to coat well. I like to wait about 1/2 hour to let the flavors meld together. You may also switch nuts with walnuts chopped coarsely or even sliced almonds.

Servings: 4-6

Bacon Wrapped Jalapeno Shrimp

Mouth watering bacon wrapped jalapeno shrimp.

Ingredients:

  • Shrimp, cleaned and deveined
  • Bacon, 1 package cut in half
  • Fresh jalapenos, cut into slivers (wear gloves)
  • Pure Cane Syrup
  • Soy Sauce
  • Toothpicks, to secure bacon

Directions:

Clean and devein shrimp. Wear gloves while slicing fresh jalapenos, cut into slivers. Cook bacon in microwave, approx. 3 minutes, still needs to be limp, so you can wrap it around shrimp. Now take a shrimp and stuff as much jalapeno as you would like into cavity, wrap with half cooked bacon and secure with toothpick.

Make baste. 1/2 cane syrup to 1/2 soy sauce. Place shrimp on grill and baste, wait a couple of minutes and baste again, then turn and baste, baste again.

Shrimp is done when bacon is done, do NOT over cook. Enjoy.

Servings: 4 to 5

Mini Oreo Peanut Butter Surprise Cupcakes

The grand kids just love them.

Ingredients:

  • 1 pkg. (2-layer size) chocolate cake mix
  • 4 oz. (1/2 8 oz. pkg. Philadelphia Brick Cream cheese, softened
  • 1/2 cup Kraft Smooth Peanut Butter, divided
  • 1 egg
  • 2 Tbsp. sugar
  • 48 mini Oreo Cookies
  • 1 1/2 cups thawed Cool Whip Whipped Topping

Directions:

Heat oven to 350 degrees F. Prepare cake batter as directed on package; set aside. Beat cream cheese, 6 Tbsp. peanut butter, egg and sugar with whisk until blended. Spoon 2 tbsp. cake batter into each of 24 paper or foil lined muffin cups; top each with 1 1/2 tsp. cream cheese mixture and 1 cookie. Cover with remaining cake batter.

Bake 22 minutes or until toothpick inserted in centers comes out clean. Cool 5 minutes; remove cupcakes from pans to wire racks. Cool completely.

Stir remaining peanut butter into Cool Whip with whisk until blended. Spread over cupcakes. Top with remaining cookies just before serving.

Servings: 24

22 Minutes Cooking Time

Robin's Recipe Corner:

Hamburger Pie

Ingredients

  • 1 medium onion, chopped
  • 2 Tbsp. margarine
  • 1 lb. lean ground beef
  • 1/2 tsp. salt
  • pepper, to taste
  • 1 can tomato soup
  • 1 can green beans, drained
  • 6 servings instant mashed potatoes, made according to package directions
  • grated American cheese

Directions

Brown chopped onion in margarine. Brown ground beef; add rest of ingredients except potatoes and cheese. Pour into casserole; top with mashed potatoes and cheese. Bake at 350 degrees F for 15-20 minutes or until browned. Serves 6.

Canned peas are a good substitute for green beans for variety.

Macaroni Salad

Ingredients

  • 1 pkg. shell macaroni
  • 1 small red pimiento
  • 1/2 green pepper
  • 5-6 slices American cheese
  • dash celery salt
  • salt and pepper
  • 1 tsp. sugar
  • 3-4 sweet pickles
  • 1/4 cup pickled juice (or less)
  • About 4 Tbsp. Miracle Whip

Directions

Cook macaroni and let stand in cold water a few minutes. Dice next three ingredients and mix well. Combine everything and mix well. Refrigerate several hours before serving.

Raisin Bran Muffins

Ingredients

  • 2 1/2 cups flour
  • 1 tsp. salt
  • 1 1/2 tsp. soda
  • 1 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 cups buttermilk
  • 8 oz. Raisin Bran (more to make thicker, if desired)

Directions

Put everything into a big bowl and mix well. Fill muffin tins 2/3 full and bake at 350 degrees F until done. This batter can be kept covered in refrigerator and used as desired for fresh hot muffins.

Orange Slice Cookies

Ingredients

  • 1 cup sugar
  • 1 cup shortening
  • 1 cup brown sugar
  • 2 cups oatmeal
  • 1 cut up orange slices candies (cut fine)
  • 2 cups flour
  • 1 tsp. soda
  • 1 tsp. vanilla
  • 2 eggs, beaten
  • 1 cup coconut
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 Tbsp. milk

Directions

Cut up orange slices and add a little sugar and flour over chunks and mix so they won't stick together. Cream sugar, shortening. Add beaten eggs, vanilla and milk. Add rest of dry ingredients.

Bake at 350 degrees F. for 10-12 minutes.

Whipped Potato Casserole

Ingredients

  • 10 servings prepared instant potatoes
  • 1 pkg. cream cheese (8oz.)
  • 1 carton sour cream
  • 1 tsp. garlic powder
  • 1 1/2 tsp. onion flakes

Directions

Whip cream cheese and sour cream and add garlic and onion. Add prepared potatoes. Bake at 350 degrees F. for 30-45 minutes in 2 1/2 quart casserole dish.
