Salmon Loaf with Cucumber Sauce

Salmon Loaf

Ingredients

  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1 cup milk
  • 1/2 tsp. salt
  • 1 1/2 cans salmon
  • 1/2 cup mayonnaise
  • 1 egg, beaten
  • 1 cup dry bread crumbs
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1 Tbsp. lemon juice
  • 1 tsp. salt
  • Cucumber sauce (recipe follows)

Directions

Melt butter, blend in flour, add milk and salt and stir until thick. Drain and flake salmon. Add salmon and other ingredients to cream mixture. Shape into loaf and bake in loaf pan. Bake at 350 degrees F for 1 hour. Serve with cucumber sauce.

Cucumber Sauce

Ingredients

  • 1 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 cup shredded cucumber
  • salt

Directions

Mix ingredients well and chill.
