Using Vegetable or Tomato Juice in Cooking

For those of us that get WIC vouchers, here are some uses for the vegetable or tomato juices that we get with them. We interchangeably use the vegetable or tomato juice. I use it for pizza sauce or tomato sauce or for salsa or spaghetti sauce or for stews and soups. Even tomato soup. You can use it for anything with a tomatoey base to it. If you get the one in the can, pour the canned juice in an empty bottle of vegetable or tomato juice. This way, the canned ones don't go to waste.

Interesting idea but doesn't it make the sauces runny? Sounds good as a soup and stew base instead of using water, though :-)
