Zucchini Raisin Nut Bread

Ingredients

  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 2 cups grated zucchini
  • 3 tsp. vanilla
  • 3 cups flour
  • 1 cup raisins
  • 1 cup nuts
  • 1 tsp. salt
  • 1 tsp. soda
  • 2 tsp. cinnamon
  • 1/4 tsp. baking powder
  • lemon juice (opt.)

Directions

Beat eggs. Add oil, sugar, zucchini, vanilla and a little lemon juice. Mix lightly but well. Mix dry ingredients and add to batter. Add nuts or raisins or both. Bake 1 hour at 325 degrees F.
