Here is a delicious recipe I found in the book "Desperation Dinners!". This would be such a refreshing dish on a hot summer day!
Just Peachy Yogurt Soup
- 1 bag (16 ounces) frozen sliced peaches
- 2 cups orange juice
- 2 tablespoons honey
- 1 carton (16 ounces) vanilla-flavored low-fat yogurt
- 1 cup blueberries, fresh or frozen
1. Pour half the peaches, the orange juice, and honey into the container of
a blender. Process on high, stopping to stir if necessary, until the peaches
are a smooth puree. Add the remaining peaches and blend on high, stopping
frequently to stir, until all the peaches are smooth.
2. Add the yogurt and pulse until just blended.
3. If using frozen blueberries, pour them into a colander and run cool water
over them for 1 minute to defrost slightly.
4. To serve, pour the soup into bowls and sprinkle 1/4 cup blueberries on
top of each serving.
Serves 4
