Tomato Chicken

It's small pieces of white chicken breast with tomatoes. It is just so good that you seem to want more and more when you get the first bit.

Ingredients:

  • 1 lb. of chicken breast
  • 5 spoons of Spanish sofrito
  • 3 large tomatoes
  • 3 spoons of oil
  • 1 can of tomato sauce
  • half teacup of red wine

Directions:

Cut chicken breast into small cubes or pieces. Season chicken with red wine and leave in bowl till other ingredients are ready. Cut tomatoes into cubes. After everything is open or cut, put frying pan on the stove with the heat on high.

Put the 3 spoons of oil in pan and stir till oil is very hot. Pour the Spanish sofrito on pan for it to cook for one minute. Then pour the tomatoes in the pan and let the tomatoes get cooked for 2 minutes before putting tomato sauce.

As the tomatoes and the sofrito are cooking, then spoon the tomato sauce in to cook for 1 or 2 minutes. Then you can pour the chicken in the pot with the red wine. Stir the chicken with the ingredients all together for at least 5 to 15 minutes.

Stir every few minutes until you see that the sauce is getting to a caramel color. Then you will see that the chicken is a light brownish color. You can then pour into a bowl and eat with white rice or with chips.

Olivia, sounds delish, but I'm In Australia and don't know your ingredient Spanish sofrito. Could you describe it's flavour or main ingredient so I can use something similar, thanks.
