Super Homemade Nachos

Ingredients

  • 2 1/4 lbs. ground beef (approximately)
  • 2 pkgs of taco seasoning mix (I like regular)
  • 3/4 cup of water
  • 2 four oz. cans diced green chilies (about)
  • 1 15 to 16 oz. can hot chili, no beans, or thick homemade chili
  • 1 15 to 16 oz. can of refried beans with sausage, or your favorite beans, or homemade
  • 1 pound Velveeta, cubed, to allow easier melting
  • 2 or 3 bags of tortilla chips
  • 1 head of lettuce, shredded and diced
  • 1 or 1 1/2 lbs. of small diced tomato
  • 1/2 lb. or so diced onion
  • 2 or 3 cans of black olives, diced
  • Favorite Salsas, Taco Sauces, Guacamole, Chip Dips, Sour Cream

Directions

Brown ground beef in a skillet and drain off all fat. Sprinkle taco seasoning over drained beef and add 3/4 cup of water. Stir until mixed, and add about 7 to 8 ounces of diced, frozen, or canned mild chilies, about 16 ounces of canned or homemade chili, and about 16 ounces or about 2 cups of refried beans. Stir. Add 1 pound of Velveeta, diced (to help it melt faster,) and stir everything together. Heat through until all of the Velveeta has melted.

Put Tortilla chips on top of plates or in bowls, and spoon meat and cheese mixture over the top.

Sprinkle fresh chopped lettuce, tomato, onion, black olives on top, and pour on or add your favorite toppings, such as Salsa, Taco Sauce, Guacamole, Chip Dips, or Sour Cream.

Leftover meat/cheese mixture can be heated up and used for a taco salad, or put on top of hot dogs, or if you really love them, more nachos.
