Ingredients
- 1 can pineapple chunks, in juice (20oz)
- 1/3 cup honey
- 2 Tbsp. orange juice
- 1 Tbsp. lemon juice
- 2 tsp. snipped fresh mint
- 2 medium size red apples, cut into bite-size cubes
- 3 cup whole strawberries
- 1 package dried apricot halves
- 16 wooden skewers
Directions
Drain pineapple, reserving 1/2 cup juice. In 9x13 inch baking dish, combine reserved pineapple juice, honey, orange juice, lemon juice and mint; stir until well mixed. Thread apple cube, pineapple chunk, strawberry and apricot half onto each skewer. Arrange skewers in baking dish; brush generously with juice mixture. Cover; refrigerate 2 hours, turning and brushing with juice mixture occasionally. Drain off excess liquid before serving.
