Crumbly Apple Pie

Ingredients

Crust:

  • 1 cup flour
  • 1/2 tsp. salt
  • 1/3 cup chilled solid vegetable shortening
  • 1/4 cup ice water

Filling:

  • 7 medium Granny Smith apples, peeled, cored and very thinly sliced
  • 1/2 cup sugar
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 1/4 tsp. salt

Topping:

  • 3/4 cup firmly packed dark brown sugar
  • 3/4 cup flour
  • 1/2 tsp. ground nutmeg
  • 1/3 cup chilled butter, cut into small pieces

Directions

Place oven rack on lowest position. Preheat oven to 400 degrees F. To prepare crust, in a medium bowl, mix together flour and salt. Using a pastry blender or 2 knives, cut shortening into flour mixture until coarse crumbs form. Add water, 1 Tbsp. at a time, tossing with a fork, until dough forms. Shape into a disk, wrap in plastic wrap, and chill for 30 minutes.

On a floured surface, using a floured rolling pin, roll dough into a 12 inch circle. Fit into a 9 inch pie pan. Trim excess dough, leaving a 1 inch overhang; make a decorative edge. To prepare filling, mix together all ingredients. Spoon into crust. to prepare topping, in a small bowl, mix together brown sugar, flour, and nutmeg. Using a pastry blender or 2 knives, cut butter into brown sugar mixture until coarse crumbs form. Sprinkle apples evenly with topping. Bake pie until topping is lightly browned and filling is bubbly, 35 minutes. If pie is overbrowning, cover loosely with aluminum foil. Transfer to a wire rack to cool.

Hearty Pork Chops

Ingredients

  • 2/3 cup lemon-lime soda
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 1 tsp. dried thyme
  • 1/4 tsp. basil
  • 3/4 tsp. dried rosemary, crushed
  • 1/4 tsp. pepper
  • 6 bone-in pork loin chops (3/4 lbs. ea.)

Directions

In a large resealable plastic bag, combine the first 6 ingredients; add the pork chops. Seal the bag and turn to coat; refrigerate for 4 hours or overnight, turning bag occasionally.

Drain and discard marinade. Grill pork, covered, over medium heat 6 to 8 minutes on each side or until juices run clean.

Yield: 6 servings

Grandmother's Oatmeal Cookies

Ingredients

  • 1 1/2 cups sifted flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 cup sugar
  • 3/4 cup butter or margarine
  • 1 tsp. vanilla
  • 2 eggs
  • 1/4 cup milk
  • 1 cup quick cooking rolled oats
  • 1 cup raisins
  • 1/2 cup chopped walnuts

Directions

Preheat oven to 350 degrees F. Sift together flour, baking soda, cinnamon and salt onto waxed paper. Beat together sugar, butter and vanilla at low mixer speed for 1 minute. Scrape down side. Increase speed to high; beat 3 minutes. Reduce speed to moderate. Beat in eggs, one at a time. Beat in milk. Gradually beat in flour mixture. Stir in oats, raisins, and walnuts. Drop dough by slightly rounded teaspoons, 2 inches apart, onto greased baking sheets.

Bake in preheated 350 oven for 8-10 minutes or until lightly browned around edges; cookies will not be firm. Cool on baking sheet on wire rack for 1 minute. Transfer to wire rack to cool completely. Store in airtight containers.

Apricot Zip

Ingredients

  • 1 can apricot nectar, chilled
  • 1/4 cup lemon juice
  • 1/2 cup maraschino cherry juice
  • 1 cup ginger ale, chilled
  • 2 tsp. honey
  • 1 pint vanilla ice cream
  • 2 tsp. maraschino cherries (sliced for topping)

Directions

Blend all ingredients except cherries, in blender or with beater. Pour into punch bowl or individual glasses. Decorate with maraschino cherries or fruit slices.

Yummy Sweet Potato Casserole

Ingredients:

  • 3 cups sweet potatoes (mashed)
  • 1 cup sugar or sweetener
  • 1 egg
  • 1/2 tsp. salt
  • 1/2 stick margarine
  • 1 cup milk
  • 1/2 tsp. vanilla

Topping:

  • 1 cup brown sugar (packed)
  • 1/2 stick margarine
  • 1/2 tsp. vanilla
  • 1 cup pecans (chopped)
  • 1/2 cup all purpose flour

Directions:

Mix 1st 7 ingredients. Pour into a Pyrex baking dish. Mix last 5 ingredients in a separate mixing bowl & spread over potato mixture. Bake at 350F for 30 minutes.

Chocolate Caramel Brownies

Ingredients

  • 1 package chocolate cake mix
  • 1 cup chopped nuts
  • 1 cup carnation evaporated milk, divided
  • 1/2 cup butter, melted
  • 35 caramels
  • 2 cups chocolate chips

Directions

Preheat oven to 350 degrees F. Combine cake mix and nuts in large bowl stir in 2/3 cup evaporated milk and butter (batter will be thick) spread half of this in 9x13 inch pan. Bake for 15 minutes.

Heat caramels and remaining evaporated milk in saucepan over low heat, stirring constantly until caramels are melted. Sprinkle chocolate chips over brownie and drizzle caramels mixture over this. Bake 25 minutes or until center is set.

Broccoli Delight Salad

Ingredients:

  • 5 cups chopped fresh broccoli
  • 1/4 cup chopped red onion
  • 3 Tbsp. vinegar
  • 10 slices bacon, cooked & crumbled
  • 2 Tbsp. sugar
  • 1 cup mayonnaise
  • 1 cup sunflower seeds

Directions:

In a large salad bowl, combine broccoli, and onion. In a small bowl, combine sugar, vinegar, and mayonnaise. Pour over broccoli and toss to coat. Refrigerate. Just before serving, sprinkle with bacon and sunflower seeds and toss well. Serves 6-8

Real Easy French Fries

Just cut up an uncooked potato into strips that look like fries. Toss them in olive oil and flavor with salt and pepper.

Put them on cookie sheet to bake for about 6 minutes and check. It may take a total of 10 to 15 minutes but you have good and cheap fries.

Ham 'n Cheese Pinwheels

Ingredients

  • cheddar cheese
  • smoked cooked ham
  • whipped cream cheese with chives

Directions

Cut cheddar cheese into 1/4x4 inch sticks. Spread each ham slice with thin layer of cream cheese. Place cheddar cheese at one edge of ham; roll up. Chill. Cut into 1/2 inch slices just before serving. Serve on cucumber slices or crackers, if desired.

Streusel-Topped Pumpkin Pie

Ingredients

  • 1 can pumpkin
  • 1 can sweetened condensed milk
  • 1 egg
  • 1 1/4 tsp. ground cinnamon
  • 1/2 tsp. each ground ginger, nutmeg and salt
  • 1 graham cracker pie crust
  • 1/4 cup firmly packed brown sugar
  • 2 Tbsp. flour
  • 2 Tbsp. cold butter or margarine
  • 3/4 cup chopped walnuts

Directions

Preheat oven to 425 degrees F. With mixer or wire whisk, beat pumpkin, sweetened condensed milk, egg, 3/4 tsp. cinnamon, ginger, nutmeg and salt. Pour into crust.. Bake 15 minutes. Meanwhile, combine sugar, flour and remaining 1/2 tsp. cinnamon; cut in butter until crumbly. Stir in walnuts. Remove crust from oven; reduce oven to 350 degrees F. Sprinkle streusel mixture over pie. Bake 40 minutes or until set. Cool. Serve warm or at room temperature. Refrigerate leftovers. Top with whipped cream, if desired.

Carrot Cake with Cream Cheese Icing

Ingredients

  • 2 cups flour
  • 2 tsp. ground cinnamon
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 2/3 cup butter, softened
  • 1 cup sugar
  • 3 large eggs
  • 2/3 cup milk
  • 3 medium carrots, grated
  • 1/2 cup coarsely chopped walnuts

Icing:

  • 1/2 cup butter, softened
  • 4 oz. cream cheese, softened
  • 1 tsp. vanilla
  • 2 1/2 cups confectioners' sugar

Topping:

  • 1/4 cup finely chopped walnuts
  • 2 Tbsp. firmly packed light brown sugar

Directions

Preheat oven to 350 degrees F. Grease a 9 inch round cake pan. Dust with flour; tap out excess. Mix together flour, cinnamon, baking powder, and salt. Beat together butter and sugar at medium speed until light and fluffy. Add eggs, 1 at a time, beating well after each addition. At low speed, alternately beat flour mixture and milk into butter mixture. Stir in carrots and nuts. Pour batter into prepared pan. Bake cake until top springs back when lightly touched and a toothpick inserted in center comes out clean, 40 minutes. Transfer pan to a wire rack to cool for 10 mintues. Turn cake out onto rack to cool completely. To prepare icing, beat together butter and cream cheese at medium speed until completely smooth. Beat in vanilla. Beat in confectioners' sugar until well blended. To prepare topping, mix together nuts and brown sugar. Place cake on a serving plate. Spread icing over top and sides. Sprinkle with nut mixture.

Peppy Peppers

Ingredients

  • 3 red, yellow, or green peppers, cut in half lengthwise
  • 1 package spanish rice, cooked
  • 1/4 lb. velveeta or generic brand cheese spread, cubed
  • 1/4 cup celery sliced
  • 1 tsp. chopped cilantro or parsley

Directions

Remove seeds from peppers. Mix together remaining ingredients. Fill each pepper with approximately 1/3 cup rice mixture. Place in shallow baking dish; cover with vented plastic wrap. Microwave on high 5 minutes. Rearrange peppers. Microwave on high 3-5 minutes more or until thoroughly heated.
