Brunch Burritos

Ingredients

  • 2 tsp. olive oil
  • 1/2 cup chopped onion
  • 1/4 cup chopped green pepper
  • 6 eggs, slightly beaten
  • 1/4 cup chopped cooked broccoli

  • 6 slices bacon, cooked, drained & crumbled
  • 1 cup shredded sharp cheddar cheese
  • 4 flour tortillas (8 inch)
  • salsa and sour cream for garnish

Directions

In large skillet, heat oil over medium high heat. Add onion and green peppers; cook and stir until tender. Remove vegetables from skillet with slotted spoon; set aside. Add eggs to skillet; cook and stir over medium heat until almost completely scrambled. Stir in onion mixture, broccoli, and bacon. Place 1/4 cup cheese and 1/4 of egg mixture down center of each tortilla; roll up. Garnish with salsa and sour cream, if desired.
