Pumpkin Dump Cake

5 Hour Stew

Ingredients

  • 2 lbs. cubed stewing meat
  • 3 diced potatoes
  • 3 diced carrots
  • 1 large onion, diced
  • 1 can tomatoes (2 cups)
  • 1/2 cup water
  • 3 Tbsp. Minute tapioca
  • 1 Tbsp. sugar
  • salt and pepper to taste

Directions

Brown meat in a a small amount of shortening. Then combine with all other ingredients and turn into a covered casserole. Set temperature of oven to 250 degrees F and bake for 5 hours. Can also be done in crock pot or slow cooker.

Indian Rice Pilaf

Ingredients

  • 1/2 cup diced onion
  • 1/4 cup diced celery
  • 1 Tbsp. butter
  • 1/3 cup rice (long grain)
  • 2 Tbsp. parsley
  • 1 1/2 cups chicken broth
  • 1/2 tsp. curry powder
  • 1/8 tsp. ground allspice
  • 1/2 cup raisins
  • 1/4 cup chopped peanuts

Directions

In butter, fry onions and celery. Add other ingredients except raisins and nuts. Cook (simmer) between 15 to 20 minutes. Add raisins and nuts once rice is cooked.

Pumpkin Mousse

I got this from a lady at church. She brought this dessert to one of our potlucks. It's great!

Ingredients

  • 2 (1 oz.) boxes instant sugar free cheesecake flavor pudding mix*
  • 2 cups skimmed milk
  • 1 (15 ozs) canned pumpkin puree
  • 1/2 teaspoon pumpkin pie spice
  • 1 (8 ozs.) tub of Lite or sugarfree whipped topping (Cool Whip)

Directions

Mix pudding and milk until thick. Add pumpkin and spice. Fold in Cool Whip. Layer over graham cracker crust. Chill at least 2 hours. Refrigerate any leftovers. Great anytime of the year, not just for Thanksgiving or Halloween holiday get togethers. This can be, also, served from a bowl, without the crust, as a salad.

*Butterscotch flavored pudding mix can be substituted. Either variety: Regular or Sugarfree pudding mixes can be used, as well as the regular or sugarfree whipped topping, both depending on your liking or dieting. Enjoy!

Easy Hot Muffins

Ingredients

  • 2 cups sifted flour
  • 2 1/2 tsp. baking powder
  • 2 Tbsp. sugar
  • 3/4 tsp. salt
  • 1/3 cup shortening
  • 1 egg, beaten
  • 3/4 cup milk

Directions

Sift dry ingredients into a bowl. Cut in shortening. Combine remaining ingredients and add all at once. Stir with fork until dry ingredients are just dampened. Do not beat. Spoon into greased muffin tins. Bake at 400 degrees F for about 20 minutes or until golden brown.

Toasted Marshmallow S'more Bars

Ingredients

  • 1 package sugar cookie mix
  • 1 cup graham cracker crumbs
  • 1 cup melted butter
  • 3 cup milk chocolate chips
  • 4 1/2 cup mini marshmallows

Directions

Heat oven to 375 degrees F. In large bowl stir together cookie mix and crumbs. Add in butter and stir until soft dough forms. Press into 13x9 inch pan and bake 18-20 minutes or until set. Immediately sprinkle chocolate chips onto crust. Let sit 3-5 minutes until the chocolate has melted. Spread the chocolate over the crust evenly. Set oven to broil. Sprinkle marshmallows over chocolate and broil about 4-5 inches from heat until marshmallows are browned but watch closely as they tend brown real quick. Let cool and cut into bars.

Jezebel Sauce

A friend who relishes holiday entertaining will adore a gift of Jezebel Sauce. This zesty condiment offers an unusual blend of pineapple preserves, apple jelly, horseradish and mustard, and it's delicious with meats or appetizers. Here's the recipe:

Ingredients

  • 1-18 ounce jar pineapple preserves
  • 1-18 ounce jar apple jelly
  • 1-18 ounce jar horseradish
  • 6 tablespoons horseradish mustard

Directions

Combine all ingredients with an electric mixer or food processor; mix unil well blended. Cover and store in the refrigerator. Serve with meat or cream cheese and crackers. Makes about 4 cups of sauce. By Jan from Suring, WI

Italian Seasoning Mix

Ingredients

  • 2 Tbsp. instant minced onion
  • 1 tsp. salt
  • 2 Tbsp. parsley flakes
  • 1/4 tsp. dried thyme leaves, crushed
  • 1/4 tsp. garlic powder
  • 1 Tbsp. brown sugar
  • 1 tsp. crushed bay leaf
  • 1 1/2 tsp. dried oregano
  • 1 tsp. dried basil

Directions

Mix ingredients and store in airtight container.
