Tomato Chive Dressing
- 1 cup tomato juice (I like to use vegetable juice like V8, it has more flavour in my opinion)
- 1 Tbsp. EACH chopped chives and rice vinegar
- I garlic clove, chopped
- 1/4 tsp. salt (optional)
- Dash pepper
- 2 tsp. olive oil
In a blender or food processor, combine all ingredients and process on HIGH until thoroughly blended.
MAKES: 4 servings: PER SERVING (1/4 cup) 1/2 fat, 1/4 fruit and veg.
I like the fact I can use up to 1/4 cup on a large salad and still keep the exchanges/calories low.
