Breaded Fish

This recipe comes from the southern tip of Baja California. The sauce is a marinade for fish or shellfish which are dipped in crumbs and sauteed.

Ingredients

  • 1/3 cup lemon juice
  • 2 Tbsp. dry white wine
  • 1/4 cup each salad oil and minced onion
  • 1 or 2 small cloves garlic, minced or mashed
  • 1-1/2 tsp. crumbled oregano
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 to 3 pounds large shelled shrimp, scallops, oysters, or fish fillets
  • Egg coating (1 Tbsp. milk beaten with each egg used)
  • Fine dry bread crumbs
  • Salad oil (or part oil and part butter)
  • Tartar sauce (optional)
Directions

To make marinade, combine lemon juice, wine, oil, onion, garlic, oregano, salt, and pepper. Place fish in marinade, turning pieces to coat all sides. Let stand 20 minutes. Lift fish from marinade; drain well. (Save marinade to re-use if desired; it will keep several days in the refrigerator.) Dip fish in egg coating, then coat with bread crumbs. Place pieces, not touching each other, in single layer on waxed paper; let stand 5 minutes. Brown fish on all sides in a small amount of hot oil (or oil and butter combined). Serve with tartar sauce if desired. Makes 3 to 9 servings, depending upon the amount of fish prepared.

Deviled Eggs With Ranch Dressing

This is a big request to serve with our Easter Lunch

Ingredients

  • 1-1/2 dozen cooked eggs
  • 1/4 tsp. black pepper
  • 1/2 tsp. onion salt
  • 1/2 tsp. garlic powder
  • 1-1/2 to 2 cups mayonnaise
  • 1-1/2 Tbsp. Ranch Dressing
  • 1/2 tsp. mustard
  • 3 Tbsp. real bacon bits
  • 4 Tbsp. grated Cheddar cheese
  • Pinch of dill weed
  • Paprika
Directions

Cut eggs in half. Put yolks in bowl and mash with potato masher. Add all other ingredients except paprika and mix well; then fill egg white halves with yolk mixture. Sprinkle with Paprika.

Sweet Potato Fries

This is a recipe that I picked up from a friend of mine at "The Dock." That is a very famous restaurant featured at the Dallas State Fair. I hope you enjoy it as much as I did.

Ingredients

  • Several sweet potatoes
  • Seasoning salt
  • Shredded cheese of your choice (Cheddar works well, but any cheese you like will do.)
  • Brown sugar
  • Bacon bits
  • Ranch dressing
  • Cooking oil of your choice
Directions

Cut sweet potatoes into quarter inch square fries. (You may fry them with or without the skins. If you use the skins however, make sure you scrub them well and remove eyes.) Take a medium or large frying pan and put in at least a half cup of oil. Bring up to temperature. (If you have a deep fryer, you get much better results.) Insert fries into oil carefully and fry until golden brown. (Crispy on the outside, fluffy on the inside.) As the fries come out of the oil, sprinkle them liberally with the seasoning salt. (I prefer Lawry's Seasoning Salt, however you may have your own preference.)

After fries have been cooked and seasoned, you will need separate bowls or plates for each serving. Arrange one serving per person equivalent to a good handful. Upon each serving, sprinkle one to two tsp. of brown sugar. On top of the brown sugar, sprinkle an even layer of the cheese of your choice. Place individual servings into either a microwave or a toaster oven. (In a good microwave, the cheese should melt in a minute to a minute and a half. A toaster oven works better and the end product tastes a little better as well. In a toaster oven it takes about two to three minutes.) Remove from toaster oven or microwave and sprinkle to taste with the bacon bits.

When served, each serving should be accompanied by an individual serving of Ranch Dressing. Eaten with a fork, pick up fries, cheese and all and dip into the Ranch Dressing. Enjoy.

Cheesy Mostaccioli

Ingredients

  • 1 package mostaccioli pasta, uncooked
  • 1 1/2 lb. ground beef
  • 1 jar spaghetti sauce (28oz)
  • 1 can cheddar cheese soup
  • 1 tsp. pepper
  • 1 tsp. dried Italian seasoning
  • 3 cups shredded mozzarella cheese, divided
Directions

Preheat oven to 350 degrees F. Cook pasta according to package directions; drain.

In medium nonstick skillet, cook and stir beef over medium high heat until browned. Remove from heat; pour off drippings. Stir in spaghetti sauce, soup, pepper and seasoning.

In a greased 4 qt. baking dish, combine pasta, sauce mixture and 2 cup of the cheese. Sprinkle remaining 1 cup cheese on top. Bake 40 minutes or until heated through.

Peach Cobbler

This peach cobbler recipe is made with fresh, frozen, or canned peaches, butter, and other ingredients.

Ingredients

  • 3 cups sliced peaches, fresh, canned, or frozen (thawed)
  • 1 Tbsp. lemon juice
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 tsp. salt
  • 1 egg, beaten
  • 6 Tbsp. melted butter, or margarine (not spread)

Directions

Place peaches on bottom of a 10x6x2-inch baking pan; sprinkle with lemon juice. Sift together the dry ingredients; add egg. Toss until crumbly then sprinkle over peaches. Drizzle with the melted butter. Bake at 375 degrees F for 30 to 40 minutes, or until bubbly and browned. Serve warm with vanilla ice cream or sweetened whipped cream.

Sunny Citrus Cakes

Ingredients

Cake

  • 1 package yellow cake mix
Filling
  • 1 package lemon instant pudding
  • 1 cup milk
  • 1 Tbsp. lemon juice
  • 1 container frozen whipped topping, thawed, divided
Fruit Topping
  • 1 banana, sliced
  • 2 kiwis, peeled and sliced
  • 1 can mandarin orange slices, drained
  • grated peel of 1 lemon
Directions

For cake, prepare cake mix according to package directions. Divide batter evenly between two 8 or 9 inch greased and floured cake pans.

Bake according to package directions. Cool in pans on wire racks 15 minutes; remove from pans. Cool completely.

For filling, combine pudding mix, milk and lemon juice in medium bowl; mix well. Fold in 2 cups of the whipped topping; reserve remaining whipped topping for garnish.

Spread filling evenly onto tops of both cake layers. For fruit topping, arrange banana, kiwi and orange slices on layers; sprinkle with lemon peel. Spread whipped topping over cakes. Note: If you dip the banana slices in lemon juice or lemon-lime soda, it will minimize browning.

Skillet Baked Beans

Ingredients

  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 1/2 cup BBQ sauce
  • 2 Tbsp.. brown sugar
  • 1/4 cup honey
  • 1/8 tsp. garlic powder (or to taste)
  • 2 large cans Pork and Beans
Directions

In a large skillet sprayed with cooking spray, saute onion and green pepper. Add the BBQ sauce, brown sugar, honey, garlic powder and beans. Mix well. Cook over medium heat for about 45 minutes. Serves: 4

Hot Tuna and Cheddar Sandwiches

Ingredients

  • 2 cans water-packed tuna, drained and flaked
  • 1/2 cup chopped celery
  • 1 small onion, finely chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green olives
  • 1/4 cup mayonnaise
  • dash pepper
  • 4 hamburger buns, split
Directions

Preheat oven to 350 degrees F. In large bowl, combine tuna, celery, onion, cheese, olives, mayonnaise and pepper. Divide tuna mixture evenly among buns. Wrap sandwiches loosely in aluminum foil. Place on baking sheet. Bake 15-20 minutes or until heated through.

Applesauce Muffins

Ingredients

  • 1/2 cup butter or margarine, softened
  • 1 cup sugar
  • 1 egg
  • 1 cup applesauce
  • 2 cup flour
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup chopped nuts (opt.)
Directions

Preheat oven to 400 degrees F. Line 12 muffin cups with paper liners, or lightly grease bottoms only. In large mixing bowl, beat together butter and sugar at medium speed of electric mixer until well blended. Blend in egg and applesauce. In medium bowl, combine flour, cinnamon, nutmeg, baking soda and salt. Add to butter mixture; mix well. Stir in nuts, if desired. Spoon batter into prepared muffin cups, filling each cup 2/3 full. Bake 25 minutes or until golden brown.

Reduced Fat French Bread Pizza

I've had this recipe a long time. Can't remember where I got it. It's fairly easy and very good.

Ingredients

  • 2 red and/or green bell peppers, cut into 1 1/2 in. strips
  • 2 cloves garlic, minced
  • 1 large, or two mini loaves French bread, split in half lengthwise
  • 1 1/2 cups spaghetti sauce, thick and chunky
  • 1 1/2 cups shredded, reduced fat mozzarella cheese
  • 1 cup sliced mushrooms, drained
  • 2 Tbsp. grated, reduced fat parmesan cheese
Directions

Preheat oven to 375 degrees F. Coat non stick skillet with cooking spray. Set over medium heat. Add peppers and garlic, cook until softened, about four minutes. Remove from heat. Place bread, cut side up on ungreased baking sheet. Top with spaghetti sauce, mozzarella cheese, pepper mixture and mushrooms. Sprinkle with parmesan cheese. Bake until cheese melts about 15 minutes.
