Apricot and Brown Rice Pilaf

We use a lot of brown rice, and this is a great recipe in which to use it. Brown rice is more versatile than a lot of people think, and our family thinks it tastes better, too. Not only that, but it's better for you.

Ingredients:

  • 1 cup shredded carrot
  • 1 Tbsp. pine nuts
  • 1 Tbsp. margarine
  • 4 oz. quick cooking brown rice
  • 1 cup apple juice
  • 3/4 cup water
  • 6 dried apricot halves, chopped
  • 2 Tbsp. raisins

Directions:

Combine carrot, pine nuts and margarine in 1 quart glass casserole. Microwave on high for 2 minutes. Add rice, apple juice and water. Microwave, loosely covered, for 5 minutes, stirring once. Mix in apricots and raisins. Microwave, covered, on medium for 12-15 minutes or until liquid is absorbed and rice is tender.
