Stuffed Green Peppers I

Ingredients

  • 4 large green bell peppers
  • 1 pound ground beef
  • 1/4 cup chopped celery
  • 2 Tbsp. chopped onion
  • 1 cup cooked rice
  • 1/2 tsp. salt
  • Dash pepper
  • 1/4 cup ketchup
  • 1 medium tomato, chopped
  • 1 (8 oz.) can tomato sauce
  • 1/4 tsp. dried basil leaves
  • 1/4 cup shredded Cheddar cheese

Directions

Preheat oven to 350 degrees F. Cut tops from peppers, remove membranes and seeds. Place in large saucepan, cover with water. Bring to a boil; boil 5 minutes. Drain; set aside.

In a large skillet, brown ground beef, celery and onion; drain. Add rice, salt , pepper, ketchup, and tomato; mix well. Spoon mixture into peppers. Place peppers in ungreased shallow baking pan. In small bowl, combine tomato sauce and basil; mix well. Spoon half of sauce over peppers.

Bake at 350 degrees F for 30 to 40 minutes, or until peppers are tender. Spoon on remaining sauce and sprinkle with cheese during the last 5 minutes of baking.

Stuffed Green Peppers II

Ingredients

  • 6 green peppers
Stuffing:
  • 1-1/2 to 2 lb. ground meat
  • 1/2 cup grated onions
  • 1 cup raw rice
  • 1/2 cup finely chopped celery
  • 3 eggs
  • 1 tsp. salt
  • 1 Tbsp. fresh-ground pepper
  • 1/2 cup bread crumbs
  • 1 cup tomato juice and milk to make quite moist.
Sauce:
  • 4 cups tomato soup
  • 1 cup tomato juice
  • 1 can tomato sauce

Directions

Remove tops, membranes and seeds from peppers. Mix all ingredients for stuffing and fill peppers If any mixture remains form into 2-inch balls and place all in baking dish or small roaster pan. Cover with sauce. Spoon sauce over peppers during baking period. Bake 2-1/2 hours at 325 degrees F. serves 6-8
