Thrifty Breakfast Burritos |

Better and thriftier than fast food chains!
Ingredients:
- 1 lb sausage
- 1 dozen eggs
- 1 dozen flour tortillas (soft taco size)
- 2 cups shredded cheese (we use cojack or a Mexican cheese blend)
- 1 cup salsa
Directions:
Brown sausage in skillet. Drain off fat. Lightly beat eggs & scramble with sausage in skillet. Set aside. Warm tortillas in microwave. Place about 1/3 cup of egg/sausage mixture on to 1 tortilla. Sprinkle with some cheese & add 1 teaspoon of salsa. Roll up burrito style. Place burritos on a cookie sheet & flash freeze for about 30 minutes. Wrap each burrito in plastic wrap & place wrapped burrito in a large ziploc bag.
Freeze.
To serve: unwrap burrito & microwave for approximately 2 minutes.

I do the same thing except my husband does not like salsa, so I leave that out. I also make steak burritos the same way, my husband just loves them. I usually buy steak thats been marked down and freeze it just enough to slice very thin, then I fry it lightly and do everything else the same.
