Spinach Salad

Spinach Salad I

Ingredients:

  • 2 bunches of fresh spinach, washed and chopped
  • 3 oz. slivered almonds
  • 1/2 lb. bacon, fried and crumbled
  • 1 8 oz. can water chestnuts, sliced
  • 2 c. fresh bean sprouts
  • 1 c. fresh mushrooms, sliced
  • 3 eggs, hard-cooked and sliced (optional; for garnish)

Dressing:

  • 3 T. soy sauce
  • 3/4 c. brown sugar
  • 1 small onion, grated
  • 2 T. Worcestershire sauce
  • 1/2 t. salt
  • 1/4 c. vinegar
  • 1 c. oil
  • 1 t. garlic powder
  • 1/3 c. catsup

Directions:

Mix together. (If using a blender to mix, chopped onion is fine instead of grated.) Mix dressing with salad ingredients. Recipe makes more dressing than needed but it keeps well and works well on lettuce salad or as a marinade for beef and chicken.

Spinach Salad II

Ingredients

  • Spinach, wash and cut off stem
  • Mushrooms, slice thinly
  • Bacon, cook crisp and crumble
  • Hard Boiled Eggs, slice

Dressing

  • 1 cup olive oil
  • 1/4 cup sugar
  • 1 tsp. worcestershire sauce
  • 1/4 cup white vinegar
  • 1 tsp. salt
  • 1/4 cup ketchup
  • 1/2 onion, chopped

Directions

Mix dressing ingredients together in a jar. Put on lid and shake to mix thoroughly. Can serve immediately or chill till ready to serve.

7-Up Cake

Ingredients

  • 4 eggs
  • 1/2 cup Wesson oil
  • 1 box lemon supreme cake mix
  • 1 box lemon instant pudding mix
  • 12-14 oz. 7Up

Directions

Beat eggs and oil. Add to cake and pudding mixes. Add 7Up. Mix well. Bake at 325 to 350 degrees till done. Take from oven and punch holes in cake with fork. Pour icing over cake

Icing

  • 8 Tablespoons lemon juice
  • 2 cup powdered sugar

Directions

Mix well and pour over hot cake.

Cherry Slice

Ingredients

  • 1 can cherry pie filling
  • 1 cup butter or margarine
  • 1 3/4 cup sugar
  • 4 eggs
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 1 1/2 tsp. baking powder
  • 3 cup flour

Directions

Cream butter and sugar. Beat well. Add eggs, one a time. Add vanilla. mix dry ingredients; add gradually. Beat well Use 1/2 batter. Spread on greased 9x13 inch pan. Spread on pie filling. Spoon the rest of the batter on top. Top with powdered sugar. Bake at 350 degrees for 30-40 minutes. Note: To make top batter spread easier, heat in microwave 1 to 2 minutes.

Cookie Salad

Ingredients

  • 1 large or 2 small boxes instant vanilla pudding
  • 2 cup cold milk
  • 1 carton Cool Whip
  • 1 can mandarin oranges (drained)
  • 1 pkg. striped shortbread cookies (broken into pieces)

Directions

Combine pudding and milk together; chill for 5 minutes. Add remaining ingredients. Serve immediately.

Chicken and Rice Casserole

Chicken Rice Casserole #1

Ingredients

This recipe was given to my by my sister-in-law right after her brother and I got married. Every time I have to prepare a dish for some occasion, it is requested that I bring this one.

  • 1 lb. boneless, skinless chicken breast, cooked and cubed
  • 1 1/2 cup chicken broth
  • 1 1/2 cup minute rice
  • 8 oz sour cream
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 tube ritz crackers, crushed
  • 1 stick butter, melted

Directions

Combine first 6 ingredients. Pour into a baking dish (I coat my baking dish with cooking spray). Mix the ritz crackers and butter together and spoon over the top of the chicken mixture. Bake uncovered 1 hour at 350 degrees.

This is so easy to do and everyone I have served it to has just loved it!

Chicken Rice Casserole #2

Ingredients

  • 2 cups rice
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 1 can cream of chicken soup
  • 2 cups chicken

Directions

Bake at 300 degrees for 45 minutes.

Chicken Rice Casserole #3

Ingredients

  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 1 cup uncooked rice
  • 2 cups milk
  • 1 pkg. Lipton's instant onion soup

Directions

Mix all above ingredients and place in a 9x9 inch or 9x13 inch pan. Place chicken pieces over top. Can use 4 chicken breasts of can use 1 chicken (cut up). Sprinkle 1 pkg. Lipton's instant onion soup over top of all. Bake 1 1/2 hours at 350 degrees until done, covered. Bake 15 minutes, uncovered. You can use pork chops instead, if desired.

Chicken and Rice Casserole #4

Ingredients

  • 2 lbs. boneless and skinless chicken breasts, rinsed and cut up
  • 1 cup raw rice
  • 1 envelope onion soup mix
  • 1 10 oz. can cream of mushroom soup
  • 1 1/2 cup water

Directions

Spray a 9 in. x 13 in. baking dish with nonstick cooking spray. Combine rice, soup mix, canned soup and water in a bowl. Mix well. Layer chicken in the baking dish. Pour liquid mixture over chicken. Cover with foil and bake for 1 hour. Serves: 6

Orange Julius

Orange Julius I

Ingredients:

  • 1/2 can frozen orange juice concentrate
  • 1 c. cold milk
  • 1 c. cold water
  • 1/3 c. sugar
  • 1 cap full vanilla
  • 10-12 ice cubes (crushed)

Directions:

Place all ingredients in blender and blend until smooth.

Ingredients

  • 6 oz. frozen orange juice concentrate
  • 1 cup milk
  • 1 cup water
  • 1/2 cup sugar
  • 1 tsp. vanilla extract
  • 8-9 ice cubes

Directions

Combine all ingredients except ice cubes in blender. Blend for about 1-2 minutes, adding ice cubes one at a time.
