Pineapple Banana Bread

Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 3 eggs
  • 1 1/4 cup vegetable oil
  • 2 tsp. vanilla
  • 1 cup crushed pineapple, drained
  • 2 cups mashed bananas

Directions

Combine all dry ingredients. In another bowl, beat the eggs; add oil and vanilla. Add pineapple and bananas and mix well. Stir into the dry ingredients just until moistened. Pour into 2 greased loaf pans. Bake at 350 degrees F for 60-65 minutes or until a toothpick comes out clean. You may drizzle the tops with your favorite glaze.

We RV'd to a campground for a Thanksgiving potluck dinner and to meet up with friends. Brought along this bread, which I had frozen the week before. Raves all around and I had to leave one loaf with the friends! (Sent them recipe today.) I think next time I will not freeze it, for it was extremely moist. Still good, though. Thanks. (Robin how do you do it? Everyone of your recipes that I have tried comes out great and is a hit. I wonder why I bother to keep so many cookbooks--we can use you!)

I make alot of banana bread----and this one sounds like it would be good too!!!
I bet some shredded coconut would be good with it---give it some Hawaiian flare!!! Either on top (for a few mins!!) or in the mix!!!
Just might have to try this!!!!!
