Delmonico Potatoes

I take this to work. I don't like eggs and it's hard to find breakfast casseroles that don't use them. You can add green peppers or whatever you want. I just like it the way it is.

Ingredients:

  • 1 (16 oz.) package frozen hash browns
  • Chopped onion
  • 1 (4 oz.) piece Velveeta
  • 1 cup evaporated skimmed milk
  • 1/4 cup Butter
  • Pepper

Directions:

Preheat oven to 350 degrees F. Put 1/3 of the frozen potatoes in a 13x9 inch dish. Add chopped onion. Put in rest of potatoes and add pepper. Melt together cheese and butter in microwave. Whisk until smooth. Whisk in milk. Pour over potatoes and cover pan w/foil. Bake for 1 hour. Remove foil and bake 30 minutes.

Delmonico Potatoes II

Ingredients:

  • 2 cups diced cooked potatoes
  • 2 cups white sauce
  • salt & pepper to taste
  • Grated cheese
  • Buttered bread crumbs

Directions:

Temp. 450 F - Time: 20 minutes

Combine potatoes, white sauce, salt and pepper to taste. Pour into a greased casserole. Sprinkle grated cheese and bread crumbs over the top and brown in a preheated oven.

Delmonico Potatoes III

This is easy & cheap. I cook it until the cheese is browned which is longer than 15 mins. I take it to work for breakfast.

Delmonico Potatoes

Ingredients:

  • 1 (16 oz.) pkg. frozen hash browns, thawed
  • Chopped onion to taste
  • 1 (4 oz.) pkg. Velveeta
  • 1 c. Cream (I use evap. fat free milk)
  • 1/4 c. Butter
  • Pepper

Directions:

Preheat oven to 350.

Put 1/2 of the frozen potatoes in a 13 x 9 dish.

Put onion on that & sprinkle on pepper.

Put the last of the potatoes on top.

Melt together cheese & butter.

When melted, blend in cream.

Pour over potatoes & cover pan w/foil.

Bake for 1 hr. Remove foil & bake 15 mins.

I forgot to add that you need to melt the cheese & butter (microwave) before you whisk it.
