Zucchini Rounds

Ingredients

  • 1/3 cup Bisquick Mix
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • onion salt or minced onion, to taste
  • 2 slightly beaten eggs

  • 2 cups shredded unpeeled zucchini

Directions

Stir together Bisquick mix, seasonings and cheese. Stir in beaten eggs until mixture is moistened. Fold in zucchini. Shape into 6-8 rounds. Fry in small amount of hot oil, browning on each side. Serves 6-8.

Just made a batch and they're delicious. Because I'm calorie conscious, I used 3 cups zucchini (approxmiately 2 medium to large squashes). That worked fine. I also salted the grated zucchini first and let it sit for about a half hour, after which I pressed out all the liquid before adding it to the other ingredients. I fried mine in a small amount of olive oil.

These are a lot like potato cakes except with far fewer calories. This recipe's a winner in my book!
