Vegan Banana Coconut French Toast
No one will ever know this is vegan, and BOY is it good!
- 2 medium bananas, mashed
- 1 cup coconut milk
- 3/4 cup non-dairy milk (soy, rice, or almond)
- 1 Tbsp. brown sugar
- 1/2 tsp. cinnamon (optional but yummy!)
Whisk everything in a bowl (I use a hand blender to get it nice and smooth).
Dip stale bread slices into mixture and cook on each side until lightly browned. Top with fruit and pure maple syrup
