Vegan Banana Coconut French Toast

No one will ever know this is vegan, and BOY is it good!

Ingredients

  • 2 medium bananas (mashed)
  • 1 cup coconut milk
  • 3/4 cup non-dairy milk (soy, rice, or almond)
  • 1 Tbsp. brown sugar
  • 1/2 tsp. cinnamon (optional but yummy!)

Directions

Whisk everything in a bowl (I use a hand blender to get it nice and smooth)

Dip stale bread slices in and cook on each side until lightly browned. Top with fruit and pure maple syrup
