Leftover Mashed Potato Soup

Ingredients

  • Whatever leftover mashed potatoes you have (at least 2 cups)
  • milk
  • chicken broth or vegetable stock (water if you don't have these)
  • stick butter or oleo
  • celery salt
  • shredded cheese to garnish

Directions

In a large pot, mix potatoes with the following ratios. To every two cups of leftover mashed potatoes, add 1/2 cup milk, 1/2 cup broth/stock/juice, 1/2 stick butter/oleo, 1 tsp. celery salt, dash of pepper. Heat through, stirring until creamy. Serve hot with shredded cheese on top.

My kids LOVE this meal. The trick is having leftover mashed potatoes, sometimes that part is hard!

This sounds so good and easy {kind of recipes I like) My husband will really like this and the ideas of the feedbacks makes it doubly more delicious - have to make this this week end. Thanks fran

Sounds delicious! I'm going to add some cooked ham or bacon, minced green pepper, and canned mushrooms and make it into a light meal.

This would be great served in a mug with a grilled cheese sandwich.... mmmmmmmmm
