Well, I love to dry most any veg. I have dried onion, bell pepper, celery, tomato, green onion, zucchini, squashes of smaller thinner skin variety, even snow peas! I store in large glass jars, and throw small amounts (1-2C. limit total) of veg and herbs into the blender to make my own flavor boosters for soups, sauces, breads, butters. YUM - great and absolutely healthy!
